Rachel, you have got to get you recipe book that you were refering to printed up to sell to us. Same format, size, ring binding. Each year you could print more recipes that you have come up with through out the year that we would add to the original binder! The cookbook that grows!

Oh my goodness! That is fantastic news! I had to have radation therapy after my surgery and it almost killed me! Lol. But- I'm still here as sassy as ever! 🤣 You just do what you're told and don't over do lol. I tend to over do(who me? I know right lol) and 3 years later I still end up sitting on the couch for a day. But as someone who's been where you are. You just enjoy every day you are here and heal. You got this!🥰🥰🥰

Hello Rachael, you only have rehydrate dry tomatoes if you want paste, but if just want to thicken your sauces just add the dry tomatoes, they will absorb a lot of the moisture.👍🏼😉💗

I made tomato powder a few days ago. I took 7.5 lbs of tomatoes, dehydrated them, and then ground them into a powder and ended up with one half pint and one quarter pint. Excited to try something new!

I agree with a clean kitchen! I am canning salsa tomorrow and I got the tomatoes and veggies cut up today. I canned cowboy candy yesterday so I had to wash and label those jars today and then rearrange my other jars of food to accommodate my new canned foods as I get them done. Then I set out the supplies to start my salsa so i am ready to start in the morning. I have a peach tree which I planted when we moved into this house and I have been canning peaches for a full week! I am so glad that is done! Now I have to get busy with my other canning projects. Your chili sauce looks so good! I make chili beans in the off season of canning and I love how fast I can make a meal with them. My husband has been eating them over rice while I have been busy in the kitchen. Fast food!

I saved this to Watch later. I am cooking my sauces and freezing in quart size freezer bags. I just can't can now. Hoping I can add the seasonings and freeze. I have spag sauces already. Next ripe batch will be chili base. Also plan to try 1 or 2 of your green tomato solutions. Blessings!

Thanks to you I have ventured out in my canning and I am putting up more dump and go recipes that already have the seasonings in them. Also, thanks to you, I got me a 22 qt. roaster last week and put up a beautiful garden harvest delicious spaghetti sauce this weekend. Looks like I'll be doing a chili sauce in the near future too. :) And yes, I am looking forward to fall and cooler temps too.

Pam says- If you are talking chili and spicey, but not hot you can try Allspice (not more than a 1/2 tablespoon in the size pot you made) and more oregano or marjoram and paprika. Anaheim peppers are also excellent. When I want to kick it, I add Ancho chili powder. There is no such thing as too hot until after you add the beans. My mom made some chili with real chili powder from Mexico that was so hot that she used it as seasoning in chili beans for over a year. She would make a pot of red beans add ground meat and about a half cup of the lava fire beans from the freezer to season the new chili. It was still way hot. But it was good chili.

I know what you mean about pressure canning, Rachel... I made a big pot of chicken stock the other day, which I was going to pressure can - but I was so tired, I just put in quart jars and stuck them in the freezer. Like you said, it's not that it's more difficult, but just more monitoring - and I didn't feel up to it! Sometimes that's just OK! 😜😍😜

Awesome Rachel... some added thoughts.... I've always cleaned, quartered tomatoes, put them in my Vitamix or any super blender. The seeds and skin are pulverized and you don't even know they're there in my tomato juice. But any blender will add air, so it definitely has to cook down to eliminate the air. Just some thoughts 😉

I grew up eating water-bath canned foods and don't have a problem with it but, I prefer to pressure can, it's quicker for me. Tomatoes are the best aren't they, so versatile! We can spaghetti sauce, pizza sauce, juice, ketchup, chili, salsa, soup.... My kitchen is full of the next batch of tomatoes from the garden to process, probably in veggie soup this round.

I've never thought of adding water to my tomato powder. I just dehydrate and grind up. Cool idea for next year. Mind you, I only have a raised bed garden because I have a teeny tiny back yard but still and idea! I only water bath can right now because I don't have a pressure canner so I many try that also with my tomatoes. I thought you could do that anyway because tomatoes are acidic.

I pull off the juice for tomato juice and have never needed to use paste! Thickens fast after I take off the juice! I love tomato beer on a hot day and also use some of my juice in soups!

If folks are worried about water-bath canning tomato products, they could get some pH testing strips to be sure the mixture is acid enough.

My tomatoes are almost all green yet. I have about 1 dozen that I got to pick that are yellow tomatoes. That's it my peppers are just starting to get going, zucchinis and pickles are going strong but everything else is slower than last year

Okay. I have never heard anyone complain about water bath canning tomato products. That is the way I have always done it. It is in the canning books. Is it that you are adding additional vegetables? Crazy!

I think I’ll contribute to this conversation. It was not about canning tomatoes with the water bath process. It was about all the other vegetables that were added and it being bath canned. . I have learned a lot from sweet Rachel‘s answer today. Also some others suggested using a pH meter or just simply pressure canning it. ❤️
