Looks like you got a nice jeep to start with! For what it’s worth, I don’t remove the steering column to pull the tubs either. Just lift up, and back. Here’s a tip for re-installation… slide a 32” length of 1-1/2” PVC pipe over the column before you put the tub on. It won’t scratch the paint on the column then!

There is a building product called “FSK Paper” that is designed to cover paper faced insulation to hold it in place (and satisfy the flame spread Code requirements). A roll or 2 and 2-3 hours with a staple hammer and you could cover that ceiling with it. WOuld reduce drafts, make it brighter and keep that paper from igniting from grinder sparks or something. I had it in my old shop and it was great.
