It being a convertible leave the 4 cyl in it, the frame will like you for that... then put the turbo stuff off a turbo coupe on it and a set of gears (373), make a nice mild performer out of it that you can put the top down and enjoy. A friend put a 393 (500hp) in one and destroyed the frame / body. The car needs a full cage to be strong enough to put a strong V8 in it, (and if you do V8 it you know you wont be able to keep you foot out of it). good luck, I'm trying to do one with a 4 cyl turbo 5 speed convertible soon. I have been driving an 85 Tbird turbo coupe 5 spd since 87, they are impressive . Good luck and enjoy.
