When configuring static routes from R1 you used IP addresses, but then when configuring R2 you used the port number. Why did you do it that way? Would it still be alright when configuring R2 to input: "R2(config)#ip route 172.31.1.0 255.255.255.128 172.31.1.194" at 9:51? Awesome videos, BTW. Your explanations are great!

A directly attached static route relies on its exit interface in order for packets to be sent to its destination, while a recursive static route uses the IP address of the next hop router.
