Outstanding! I've seen many different chefs try many different ways to debone chicken, but this is the best, most efficient and most skilled way I've ever seen. You can see how sharp the knife was and you can also see how skilled he was at using it. I especially liked the way he removed the wing bones without needing to cut! This is an excellent video and proves how beneficial it can be to learn from someone with genuine experience! Thanks Andros.

In the 4th dimension we could remove the bones without cutting flesh or skin. We could replace the bones with seasoned carrots or celery, for presentation. Sadly, we are but 3 dimensional beings.

Very good technique used specially on the wing part. Thanks so much for this. I was always having a hard time cleaning up all the bones of a chicken and it felt like i was in a slaugter house, bloidy and messy. And as i saw this video I learned a lot through practice. This inspired me to do a lot of boneless roasting.

Excellent. You make it look easy. You are the Best I have seen. A Cuban lady showed me how to do this many years ago with a turkey and I forgot. She stuffed it with: ground up: turkey, pork and hamburger: added spices garlic and lemon. It was for Christmas. All that stuffing inside helped to keep the shape of the turkey. Also I want to thank you for having respect for the food God has given to us. Both my grandmothers taught me to use the bones to make the best soup and soup broth.

Chef Andros thank you so much for this great video! I succeeded to debone my chicken for the first time almost as well as you in under 10 minutes :) One tip for the viewers : for the bones to come out as clean as in the video, I suggest that you first play with the joints of the chicken before making any cut, until they snap. And they will come off as easily as shown!

I appreciate this VERY much! I deboned 2 chickens yesterday, and was able to get the job done reasonably well thanks to this video, which I watched several times before, during, & now after deboning the chickens. I don't think my chickens were as fresh - one was missing a wing, the other with a broken leg, and found a couple holes in leg bones, one of which snapped when trying to take it out. Now my goal is to be able to master this and be faster! Today, I will be sharpening my knife. A million thanks!

I used to work at a Chinese restaurant as a meat cutter and was taught using their method to debone 60 chickens in 30 min....the method you demonstrated was very impressive and will have to give it a try sometime.

I cut meat in a grocery store and never had to debone a whole chicken until the other day. I did it but it was not as clean as I'd liked. Your video helped me a bunch. Unfortunately at my store they do not have that net to have it tied up so easily and we must do it by hand. Thank you, sir.

Wow! This is incredible way to go about deboning a bird. You went from the breast bone down to filet the meat. I have seen other videos go from the back down to debone a bird. I tried the later mentioned way to debone a chicken and left it looking almost like a chicken. LOL. I shall try your method the next time. Thank you so very much.

I deboned two chickens this weekend following Chef Andros’ method. While his came out looking much nicer, I still wound up with two fantastic smoked boneless chickens from my Traeger. Thank you Chef!

This method is by far the most relatable and understandable that I've come across. Far better than the alternate technique of slicing through the spine of the chicken that most tutorials seem to deploy. What I also love most about this technique that the Chef employs is that you end up with a more uniform looking platform of chicken to roll - more expansive and squarish the breasts on either side (much less mess as you try to make a ballotine), as opposed to both the breasts together and leaner amounts of meat all around (makes folding a lot more technically challenging).

Brilliant! Loved the way you popped out the leg and wing bones. However, what took the cake is the removal of the little auxilliary bones that are placed alongside the leg bone. For a moment, I thought you forgot them.

Thank you for this very detailed video! We butchered 15 chickens yesterday and I was going to quarter them and then debone them but this looks like a much much cleaner method that wastes much less meat! I'm hoping I can do this at least half as well as you!

Fantastic Skill, I will try to hone my own now... Thank you for that Very Informative Video...... I'm curious though, is all the cartilage out, or will there be some small pieces not to worry about.? Thanks again...

Cartilage is edible, but you can trim it off if you want. I leave it on at the end of the breast to hold the little fillet together. Likewise please see my deboning of the turkey. Thanks for watching.

Watched this video multiple times and scanned through the comments for added tips, and finally deboned a chicken for the first time today! Nowhere as effortless and neat as yours but I was able to go through it till the end 😃 (as opposed to giving up midway, which I feared). Thank you for the video chef!

Read in the description below and watch my other video which is even simpler. Same way you can debone a turkey for stuffing. I have plenty of chicken videos.

greatly appreciated the skills I am not as fast as you are but it came out great, then I stuffed and rolled with black Forrest ham and pepper jack cheese slightly cooked bacon , then breaded the roll didn't have any chef tie so I untrusted the weight of the roll , it turned out beautifully 😀 , thanks chef my wife and boys thought it was store bought

You could tie it with a cotton string also, repeat this 3-4 times and you will gain the speed. Thanks for watching.
