That's cool. The meat market I go to had Akaushi but I have never spent the money for a brisket from them. The akaushi ground beef and ribeyes I've had are amazing; I can only imagine how good the brisket would be.

I think with the new coal basket you had more coals than ever burning so that big ole' slab got done a little sooner than you were expecting, so now you have a new learning curve with your cook times. it'll be interesting to see.

Thanks very much! I do find it very helpful to have different options of cookers and smokers. If you are really wanting to get into a charcoal grill or smoker, I would suggest you get the Weber Kettle or Weber Smokey Mountain. They are fairly cheap and make some fine tasting food!

Thanks brother, it was some fine tasting brisket. I can't believe it cooked so quickly!! Most of the Prime and Wagyu I have cooked cook in about 1 hr per pound. This Akaushi brisket cooked even faster than that because of all the marbling. Yeah man, I love that jiggle!!! Thanks for watching MeatHead!!! Cheers!

First of all, I’m glad you’re back, I missed you, brother. Secondly, It was beautiful beef brisket even if it was a bit overdone. I think sometimes briskets don’t need to go all the way past 200°F. Sometimes they’ll be just fine at 195°. Thirdly, what an awesome basket, seems like the fellow will have a good business making aftermarket WSM accessories.

Have your ever tried TexJoy seasonings they are a small company down here in SETX if not you should especially the steak seasoning it works on almost anything, makes a great bark on brisket, work excellent on steak and even as a French fry seasoning. That basket looks like a quality piece - would be a nice addition to any WSM. Good to see the River Country temp gauge again. The brisket sure had to have a good flavor. Did you wonder why there was not a smoke ring on it?

Sometimes folks do give way too many kudos to a smoke ring, though sometimes even without trying one shows up. There are day that I do have a 'ring around the collar' after a day at the BBQ.......

Hey Joe, that brisket was fabulous brother! I do miss cooking on the WSM. I will try to use it more this summer. As for the smoke ring, if you notice when I am putting the chunks of wood on, I lay them on the outer edge of the unlit briquettes, so there wasn't a lot of smoke at the beginning of the cook which you need in order to get that nice smoke ring. Of course, you know all this!!! LOL

Man, it's good to see you again T-Roy! I got use to seeing you weekly, lol. Awesome brisket. I bought a 22" WSM a few months ago & was finally able to do an overnight cook with a brisket I bought at Costco. I was shocked on how long & stable that WSM runs. 🍻

Costco has some terrific briskets, so I'm sure yours turned out excellent. And yes, that WSM is a beast!!! I find that as I get older, I do not want to stay up for those all night cooks and the WSM is my "go-to" cooker when that happens. You get almost the same flavor as you do from an offset and don't have to tend to the fire all night. I appreciate you watching and thanks again for the support my friend! Cheers!!!

Nice video, Troy for being a little over cooked as you say, it looks so juicy and tender and I bet wonderful to eat. That brisket looked absolutely wonderful. Good lord that looks good. I am still wondering what to buy to be able to BBQ low and slow here in Iceland, the outside temp is usually between -5 and +12 C. But the wind is a factor since we live on an island in the North Atlantic. It seems like it is always windy. A WSM with its low insulation, it will be hard to set it and forget it.

Thanks Stefan, it was a fine tasting brisket. If you are able to get something like a WSM, you would need to wrap insulation around it to prevent heat loss and you would probably need to build a 3 sided wall to put around it to prevent the wind from messing with temps. The Weber Summit is insulated and will probably work for you or perhaps a Kamado type cooker?

Hi Troy. Thanks for the pizza dough recipe! I just subscribed to your channel because Ive been watching it long enough and getting some awesome tips. The ice has mostly melted up here where I am and I turned to you for some great ideas on bbq, and after watching some vids on that Witchita, I thought, "I got to try that!". Well, I didnt buy the Witchata, but at the local box store...I dont want to plug any particular retailer, but its big, its orange, its boxy... you get the idea...well I picked up an offset cooker and man I am doing my best to master the technique. If I can master it, I can justify to the accountant why I need to have a Witchita! Keep up the good work. I really appreciate what you do.

I had a wasn't too impressed with my 13lb akaushi...... the fat cap in mine dug deep into the flat. Had great tenderness though. Edit: Great job keeping it together T-Roy!
