It was around 20 seconds. Extraction begins from when you press the button to when he stopped it. It all depends on how much he had in the basket.

25 second extraction, perfectly acceptable for latte art, looks like 16g dosage so probably in the sweet spot for the comp espresso

I'm a barista. People take photos of the latte before they drink it, share it on Facebook, Instagram, Twitter or wherever else; they then tag your cafe in it and give you mass free marketing. Pretty much take a picture and drink it.

You have to inject air as soon as you start frothing then just slowly move up your pitcher and make it spin until you reach the right temperature. Make sure the tip of the wand is at the bottom of the pitcher before turning the steam off as it will create bigger and sticky bubbles when you turn the steam off and the tip of the wand is in the level where the foam is.

You have to put the tip of the spout as close as possible to the espresso. That's the reason why you should tilt the cup.

Keep practicing and you'll soon get there. Lower the tip of the steam arm just under the surface and open the steam valve at the same time. The force of the steam will pull the milk down and suck air from the surface. When i started out with using a panarilllo steam wand with the hole.... i blocked the hole up and found this helped at the time. You don't need expensive equipment to stretch milk to a creamy consistency.

The trick is to find the sweet spot in your pitcher that makes the milk swirl. Keeping the milk swirling is key.

You can even steam the milk with very basic mechanic frother from IKEA for about 1 USD/1 EUR. The principle remains the same: keeping the milk swirling. There are excellent videos covering this on KZbin and even when using this "alternative" (instead a professional steam wand) it takes tens if not hundreds of cappuccinos of practice. :-)

A lot of people in the comments asking "Why" you would do latte art. First its the sign of a good barista. You have to have good milk to do latte art. Second and most important is marketing. In todays world, the average person cares more about how photogenic their food is than how it tastes. We all have those friends who can't eat pre-packaged bagle without taking a photo. People upload the photos to their Instagram or whatever and other people want to try what they had. I can't tell you how many times someone has shown me a photo their friend posted and said "I want this." or "It's my first time here but my friend posted about you online." etc. Why pay for marketing when you can just convince people to do it for you. I'd say at least 70% of the latte art I send out I can stand there and watch people take photos of it. Also, I get increased pay for it and some pretty nice tips for pulling it off. Like I did a triple heart design for a couple on their first date and the guy slipped me a 20 after and I didn't even know that was what was going on.
