Can you clarify, is table salt in the UK the same as iodized salt in the US? I’d be surprised that chefs were recommending iodized salt.

@@Exayevie True. Iodized salt doesn't have as clean of a taste as some other salts. I have heard many chefs say they prefer not to use it. My question was really just to understand what is considered "table salt" in the UK.

exayevie i live in italy we use sea salt all the time either fine or grosso large , when i go home to dad in the uk i hate the the table saltthat my dad has ite like the difference between sugar and sweeteners , but we pay about 30€cents a killo for seasalt and about 50€cents for iodized seasalt

A chef may look cute all wrapped up under your Christmas tree, but remember your commitment to them goes beyond just a simple Christmas gift. Chefs need kitchen space to roam around in, ingredients to experiment with, and knives to play with. Know what you're getting into before gifting someone a chef.

I was lucky enough to get one at birth. Only 5 years older but already with undeniable chefyness (cinnamon toast and oatmeal with butter, honey and dates for breakfast! In first grade. Perfect omelets and French toast by 3rd grade.) Only had her for 28 years, but I still miss that food.

Loved the banter in between all the lads, and James' facial expressions, especially with the "Ben-cancelling" gesture'; the chemistry and rapport is the reason why Sorted vids are such a delight! Loved Barry's disappointment at the smoked salmon, and his disgust sampling blue cheese was just too cute!

Can you guys do a “double relay” everyone has to go twice but 5 min each! Then when someone starts something and come back and finds out it’s been hidden or it has gone in a different direction then they will react in a very funny way! “Double turn relay”!

I think when people see the overall price tag they have the reaction of "holy crap that too much." But when you break down the portion size and that it is for a feast/special day, the money is worth it.

Does that greasy, buttery oil that it leaves on the hands count as part of the texture? If not, I think that I have four reasons to dislike it. Though the fish is a lot better grilled, in fillet form and given a teriyaki glaze.

Me too. I once lived in Alaska and everything there was very expensive. A native friend of mine caught a school of salmon. By law he had to keep what he caught so he was giving it away to everyone he could. I ate salmon for every meal for almost 4 months. It was truly a godsend at the time, but now, 40 years later, I can’t stand the sight, smell or taste of salmon. In fact, just the smell of it ruins my appetite...

I raise our turkeys - Bronze Breasted and they are fabulous, our biggest was a Tom who dressed out at 43 lbs, we are a family of hunters and the majority of our red meat is game usually moose , I live in BC Canada 🇨🇦.

I do think the buyers went out of their way to find a BIG price difference. Ben was equally surprised, it seemed to me, by how cheap the lower priced one was. I've watched episodes where they have been proud of not doing that. Still very interesting, often fun, but not to be taken very seriously :-)

I think the difference is Ice Cider they freeze the water out before they ferment it, and Applejack they freeze it out after fermentation.

I've always heard people talk about dark meat and white meat in a turkey but I never realized how stark the difference was until this video when they were put in a plate beside each other. Thank you for that. It may not have been the point but I learnt something new.

Thank You for the turkey recommendation... I buy free range chicken, and it took a while to process the differences, but honestly if we want to keep eating meat and being moral humans, we have to accept the differences. Also the give away on the cheese plate was the blue cheese. You see the straight lines in the less expensive blue cheese, that's where the cheese has been pierced in order to allow the mold to penetrate more quickly, speeding the aging process.

In my house it's ham for Christmas because I wouldn't want turkey two holidays in a row. :P That said even if I buy an inexpensive turkey it comes out juicy and perfect every time thanks to my mom and her secret. My first ever turkey for Thanksgiving as an adult was a disaster though. That is when my mom shared her secret and she was the only person I called since she always had perfect turkey when I was growing up. I miss her so much every day but especially this time of year. - Heidi

Greetings from America! I'm trying to wrap my brain around paying either of those amounts for a turkey. I get mine frozen at the local grocery for $0.59 per pound before Thanksgiving. I get a huge 20-24 pounder for under $15.00 and then I brine it with homemade vegetable stock and spices, and it comes out amazing. The one year I did a fresh bird, it still cost me only $30 and it came out just as good. I don't know the husbandry and so forth, it was a store-brand turkey, but I've had nothing but praise for my turkey for years, and never a dry slice. That said, love this channel and keep it up, guys!

This year my mom sourced a fresh turkey for the first time for American Thanksgiving. I went to the store the next day to get any remaining pieces of turkey because it was that amazing. Definitely makes a difference with turkey

With the cheese board example, I think the most important tip for buying it is to go the extra step and visit a cheesemonger. You’re more likely to get better advice and better quality cheeses.

Go to Italy. Compare the olive oils. Even if it's an #ad for the car or airline...this would be fantastic. I almost said brilliant, after watching 3 minutes of Sorted.

Christmas day arrives and i find myself back here at sorted food. Just wanted to drop a note of thanks to Ben for his mention of cooking times. I had a turkey crown with the recommended cooking time of 3 hours, The actual time was 2 hours 5 minutes. Had i not watched this we would be looking at a cremation instead of turkey dinner. Thanks Ben and SORTEDfood!

How about ciders?? I haven't actually seen how to 'pick' a good cider.. There are videos of how to decide eers and wines, and how to pair foods with what flavours, but never anything for ciders!! I'm not a fan of drinking beer - love to cook with it though - and wine just doesn't taste right to me, so how about something new?

Such Useful Tips, Thank You. 1. If can See the Salt use Sea Salt. 2. Spend money on the Chutneys & Crackers to. 3. 80/20 Principle sooo good. 4. Get a Meat Thermometer 5. Jamie wants Alcohol, how about Wine Pairings, Whiskey Pairings, Beer and Champagne Pairings with odd ingredients. Example Champagne and Pizza, Whiskeys with Desserts, Beer and Meat on a BBQ?

I've switched over just getting a breast from the local butcher, they do the medium breast trussed up with stuffing inside & a blanket for £40 which is a bargain compared the a whole bird whilst still being able to have something high welfare and locally sourced.

I absolutely agree. If you can, spend more on the hero of the dish for a once a year celebration, and less on the other sides (but ideally all well sourced and cooked with pleasure). A turkey is huge and will feed many - if you know how they are raised I think most will opt for the well raised ones. Others can be jammed in crowded dark barns, injected with things to seem juicier, bought in frozen lumps. Don't go for that. Once a year, don't spend on socks for gifts, spend on a delicious special supper to be shared by all together.

Being American, when I saw the title it took me a second to realize that you were cooking a 102 LBS turkey and it was actually the cost. Yes, I saw the money symbol but saying it out loud (or in my head) I heard LB and not pounds as in money.

Something similar used to happen to me(American also) when my English friend back in Junior High would talk about £ pounds.. It happens sometimes even though we know the difference. A momentary brain fart as my dad would have said..😄 Happy Holidays!

I think you'd be able to find a responsible turkey source for quite a bit less than 100 pounds. Ours is usually around $80, which I think would be 40-50 pounds if I'm right?

It sounded to me like to cost of delivery (as Ben said it was delivered to their door) was included in the price. I live in rural USA, but can still get fresh turkeys in the local supermarket. If I drive 35 minutes to a moderate sized city and a stand alone butcher shop I can get a heritage bird, free range, organic (all the pricey adjectives) still for far less than any delivery service would charge. While Ben tried to prepare the birds to be as close as possible, buying one in a store and having one delivered is a huge difference

As someone who has assisted in the raising of chickens and has had friends who raised turkeys, I knew just by looking which one was the more expensive. Small batch, truly free range and organic birds are move too much to be fat and eat bugs and such making them more lean and with tougher meat. Same applies to cattle, generally speaking. Large scale farmers keep the animals from moving to increase fat content and feed grain to again increase fat content and keep flavor consistent. If left to graze, you will get a more gamy flavor and it won't be consistent across different animals unless measures are taken to ensure feed type consistency. By crowding a large coop/feed lot you increase production per acre/hectare (thus are able to decrease price due to economy of scale) but will need to feed antibiotics in feed to keep the vary prominent risk of disease in check due to overcrowding. By contrast, true free range and organic farms will need to use more land per animal and will loose bulk due to that animal moving around. But the animal will be healthier thus you can get away with not using as many medical interventions.

There observations on the different salts are solely the different grind size. Grind size can affect your measurements when cooking, as coarser grinds will trap more air, and you’ll actually get less per measured amount (unless you go by weight). Chemically, “table” salt and “sea” salt are the same. Both are sodium chloride. Both can be iodized or not. Sea salt is usually sold as “coarse ground”, but can be found as finely ground as table salt. The only real difference is how each are acquired. Sea salt is far more environmentally friendly, as it only involves evaporating sea water. Table salt is usually mined.

You need to do an episode where Ben and James both compete in a chef vs chef battle but the caveat being they can only choose to use items from a selection of cookwear they hated from the kitchen review episodes. Merry Christmas lads 😄

Jamie: what I don't like about salmon is texture, smell and flavor. Barry's reaction to blue cheese is Jamie's to salmon. James wasn't enjoying the Brie jokes and... A chef is for life not just for Christmas was 😍😍😍

Buy a great turkey this Christmas, buy local, and certainly from your home nations! Support your local farmers this Christmas, like Ben said, spend a little bit more, it’s Christmas and it’s a once a year thing. Spend that little bit more supporting your local farmers, and then it’s more sustainable, you can trust where it comes from and the welfare I can predict is incredible and it will help them out during this tough time for the whole agricultural industry! Merry Christmas everyone, from a farmers daughter :)
