To be fair, in the common fish market (well, markets in MY country), you can ask for a fish to be filleted straightforward instead of asking for the whole fish and butcher it yourself. As for shellfish, you have to do the deed yourself.

Watching these type shows, filleting fish always seems easy, but watching a pretty good chef struggle with it kinda put it in perspective how much practice it takes. But damn did she handle that lobster like a boss!
