Details:
🌟 I always keep a base amount of 100g or less
🌟 I always feed all of my starter, not a portion
🌟 I feed my starter based on what I’ll need for my dough
🌟 I never use ratios, it’s not necessary
🌟 I never discard, it’s not necessary
🌟 I feed her with strong white bread flour and tap water
🌟 I replace the lid firmly after feeding
🌟 make sure your tap water is safe to use, use filtered if you’re not sure
🌟 feed your starter with great quality flour for best results
🌟 stir with clean stainless steel utensils and clean them immediately
🌟 once I’ve removed what I need for my dough, I put the lid back on firmly, and return her to the fridge. No extra feeding is needed.

In this video you will see my starter Star before, during and after feeding her, you can see her wonderful growth and activity once she’s digested her food, I love it every single time 🤩🤩🤩

I love making the bread but there are only two of us so about every two weeks I make a loaf. I also use her for buns, English muffins and bagels. So satisfying. I actually made my own almond butter to enjoy on my toast. The fun is never ending. Thank you for flawless instructions!!!

Hello there, I want to thank you for your desire to teach us the art of making sourdough bread. You are a good teacher and I am learning a lot from you. I have been making bread, and I enjoy doing it, but I have to admit that sourdough bread is another beast altogether, but a good and delicious one. I have been using your “master bread” but I must be doing or not doing something because my dough does not rise the way your does. It’s frustrating, but I am not giving up. Could you please give me an idea what am doing wrong? Thank you for your time. Lidia

I have my sourdough starter on my counter, and I feed it once a day around 8-9pm at a 1:5:5 ratio (25g starter, 100g water, 100g flour). I normally wake up in the morning to see that it has more than doubled in size. By the next evening for feeding, it is still about double it's original volume but has deflated a bit. I have tried your recipe and my sourdough starter doesn't seem to inflate the dough at all, and I live in a warm house right now. I start in the morning when my sourdough is more than doubled in size but I didn't feed it again, just went straight to the autolyse. Should I still feed it again in the morning (without discard) before starting? It's hard to tell from this video, but are you just looking for some bubbles on the surface, or looking to see that is has risen by 2x or similar?

Hi, your starter will be fine to use without feeding again. I look for growth and activity. If the starter is active and grows well but the dough didn’t grow there will be another reason...

I use Elaine's enriched dough recipe from her website and add mixed fruit and mixed spice. Tastes amazing 😋
