if you want an even quicke version: melt dark chocolate, whip up some egg whites and fold in the slightly cooled down chocolate. Chill for maybe an hour but you dont have to if you like warm mousse au chocolat. Thats it. Its incredibly indulgent and is a great way to use left over egg whites.

Oh I'm so going to make the last one. Years ago we had a café that did these with a thin shortbread bottom, thin layer of cherry jam, dome of airy mousse and then a dark mirror glaze with gold leaves on top. It was so pretty and soooooooo good ❤ Unfortunately the café closed down.

So, being a pastry chef and being someone who always wants to show off, I definitely go for the mirror glaze version. I even wanted a cookie or cake base with another contrasting flavor in the center like raspberry or passion fruit or something. Also, being a person who constantly diets (keto), I pretty much do the 5 minute mouse with a very dark and also sugar free chocolate very often. I do think if you are just going to serve "mousse" in a parfait glass and call that the dessert like the old school way of doing it then it must be the one that they put in the jar. That can be piped if you do it immediately and then let it set in the fridge. It will hold its piped design as it sets.

I've made versions of each of these chocolate mousse over the years. It entirely depends on how many people you are feeding and what meal you're serving to whom. We usually make the second dessert as a special occasion meal at home or a casual dinner party at home. We always would add natural oil flavourings, nuts, caramel, brandy snaps, herbs, spices, fruit or some other flavour to increase the depth of flavour or to lighten the sheer density of that dark chocolate.

A light, vegan, no sugar chocolat mousse: Use the water of cooking chick peas (i usually use canned chick peas at home and so i use that water), whisk it until raised; melt your vegan chocolat (any type really as long as it has some sweetness to it), add everything up with a bit of vanilla extract aaaaaand done! I love it!

I make a quick mousse with TWO ingredients: Egg whites and chocolate-milk powder. I make a standard meringue and put in the chocolate-milk powder and let chill for a half-hour. Voila! Chocolate mousse! I have been doing it this way for decades since I was 12.

They do work all the same, just don't use the gelatin measurments in the recipe, and really really follow the instructions on your substitute's package (I've always had instructions on mine, like 10g per liter or whatever, and it works really well for cheesecakes! )

The whipped chocolate cream you can also prepare ahead by scalding the cream and pouring over the chocolate, like ganache. Chill it overnight and you don't have to worry about breaking the mix, though it overwhips easily, so watch it closely!

It's an uncountable noun like 'fish' and 'sheep' so 1 mousse and 2 mousse, many mousse and also it is a countable noun if you have numbers of different types of mouse and wish to explain that to someone, for example: 'There is a lot of mousse on the table, we have 4 types: Chocolate, Salmon, Pickled Herring and Strawberry. Yum! Choc mousse is my thing! I seem to collect recipes. My first was a marshmallow and ideal milk combo, then came the egg white mouse, followed by a super rich cream based mousse. Recent times gave introduced me to the avocado based mousse and then the aquafaba (chickpea water) mousse. I've seen a video on the two ingredient mousse of watwr and choc which I must still try. ❤
