I feel like people who don't like eggplant have only tried those big, thick skinned, bitter eggplants with lots of seeds. The long skinny eggplants are DELICIOUS and taste totally different. Way more mild and the texture is better. This recipe looks amazing!

Nice to see another spin on cooking eggplant. There's not much different in those and squash which is prpbably in my top 3 veggies but you gotta know a little about squash and eggplant. If I plan on frying mine in flour\egg\flour, I cut it up, spread them out on a paper towel and salt them down to draw some of the mositure out of the squash. It makes it crispier and also half way seasoned. Now most people don't do this but I take mine, flip them on a new paper towel and salt the other side also. That way I know i'm drawing as much moisture as I can. Then batter em up and deep fry til golden brown. Good ole Southern Cooking.

Never mind students or single 35 year old people - this 54 year old man is well impressed. I love aubergines (eggplants), my recipes are mainly Mediterranean so anything new is a bonus when it comes to one of my favourite vegetables. Going to enjoy this and also search out some Korean recipes so I can get extra aubergine (eggplants) recipes! (I would have used an eggplant emoji - but something tells me it may be misconstrued). Ha ha! Thank you guys for this amazing recipe. I am sure Uncle Roger would approve for one of his English nephew's to make this! Thank you.

I'd never cooked aubergine before and used to hate it for its weird taste and mushy texture but this turned out very, very nice! The aubergine was the best part! 😳 I used vegan ground beef. Thanks as always for the delicious recipe!
