The (semi) freezing and then thin slicing works on all kinds of meat, pork as well as beef. It's a good technique to use if you don't have thin sliced meat available.

Having it about half frozen means it will be firmer, less slippery, easier to slice, and much safer to slice. It's not going to be slippery and pop out of your hands while you are slicing.

Aaron is right. I have felt reluctant to make much Asian food because I didn't know how. His step-by-step instructions are so clear and well videotaped, and he tells us which parts are essential, and which sre "Don't worry about it." Some of the most liberating words to be heard in a kitchen! Claire's savoring of Aaron's succulent presentations makes me hungry and happy in concert with her. Yum.
