I’m going to be 66 and am trying to get used to cooking for one. I never know what to cook. I will cook and then put some in the freezer to just take out and warm it up. That seems to work out as long as I cook it in the first place. Tonight I had pork fried rice and corn.

Good for you! I’m also on my own later in life, and for a long time couldn’t be bothered to cook just for me. Lately I’ve been cooking more often and either freezing leftovers for myself or taking a plate to neighbors that I’m friendly with.

I am a single person and two of my good friends and neighbors are also single gals and we will often share with each other when we make a bigger dish of something. It is great because so many recipes are not designed for single servings or even enough for a couple or some who are used to cooking for a family haven't quite been able to figure out how to downsize recipes enough for just one or two people. It is so nice to be able to share what you like to cook and it's great to receive something that is homemade that you don't have to cook yourself. It always seems to taste better when someone else cooks it! I'm sure your sister-in-law really appreciates this as she navigates this new chapter in her life. I know when my mother was widowed it was very difficult for her to be alone after having been married for 40 years. We would often do things together and she would still cook Sunday dinner and I would come over. I'm sure you are a real comfort to your sister-in-law. Bless you for sharing with her. ♥️♥️

Mandy, I just wanted you to know that mom has struggled with cooking dinners for herself since dad passed away a few years ago. He was the cook of the family. Mom never liked to cook & has mobility issues so I try to cook a double batch of something every week to share with her so she has a few home cooked meals instead of relying on frozen dinners. Your lemon butter chicken and orzo & the chicken noodle stuffing bake are her new favorites!!! She hasn’t stopped raving about them!!!!❤🎉

If you don’t use ginger often, you can freeze fresh ginger. Break off a piece, scrape off the skin with a spoon and grate the ginger piece. This works better than chopping up the ginger with a knife. Love all of this week’s recipes. I’ll be making each one. Thank you.

I didn't finish the video. Don't feel bad, Mandy!!!! I couldn't cook back in the day. My mom never taught us how to cook. Everything I cooked came out of a can or a box!!! I'm surprised I didn't burn HOT DOGS!!!! I'm not kidding!!! Needless to say, I did A LOT of Hamburger Helper myself!!!! No shame in not knowing how to cook!!! Just a tip.....buy ginger root & store it in the freezer. Use your microplane & grate as needed. You dont need to peel it! Much more economical than the tubes.

Lil tip with the ginger... I buy mine on sale and stick it in the freezer in a zip-top bag. It's SUPER easy to grate on a micro plane and you don't have to peel it. It stays good in the freezer for MONTHS. It's also way cheaper than the tube stuff and it tastes better and is more potent. :)

Me and hubby have a saying "if Steve likes it we will love it" We have the same the same taste buds. No such things as too much garlic . And because of you we are obsessed with the flavor lime. We recently discovered that lime sauce mixed into pizza garlic sauces is delicious on pizza. So delicious you need to try it .

The 3rd recipe reminds me of the chicken cordon bleu casserole I make. It's chicken, ham and broccoli mixed with cream of chicken soup topped with swiss cheese and then topped with stuffing...delicious 🤤 This is about the only way my husband will eat stuffing lol

I made the Subbie Supper tonight, the chicken noodle stuffing bake only my husband doesn't eat chicken so I used Butcher Box ground pork. It turned out fabulous!!! Thanks for sharing that recipe, I think it will be a keeper here!!

If Steven likes Hamburger Helper, try Velveeta cheeseburger Mac and cheese. Just cook macaroni separate then mix with sauce. I add chopped tomatoes and onions on top. Quick and easy.

Oh my God! I made the chicken noodle stuffing bake! It was delicious!! Serious comfort food! I didn't have any chicken so used 2 large turkey wings that I let cook off the bone in the crockpot. Shredded it and seasoned it.
