I made the curry tonight. The only changes I made was sautéing the onions and cut the salt in half. Best curry I’ve ever made. Absolutely delicious. Will make again and again.

My husband will eat the wfpb but if he goes too long without meat he starts complaining and being all whiny 😂 I try to just add a portion of meat to his serving of whatever I'm having but if it doesn't work out that way sometimes I run out of steam to cook myself anything after cooking for him, I also have two picky kiddos aged 2 and 4 and usually I have to make them separate things too just to get them to eat 🥴

The marinara sauce ruined it for me. I couldn't tase anything but that. I used exactly 2 cups. I think just adding a bit of tomato paste would have been better. The cashew cream didn't save it either.

Traditional Indian cooking often calls to toast the dry spices and seeds. It amps up the flavors a bunch. Since marrying an Indian and my mother-in-law teaching me that step, I’ve used it with a bunch of different cuisines. That being said, I think I’d be relegated to sleeping on the couch if I used marinara to make tikka masala. 😅

Ooooo - I love one pot recipes & stews (yum!).... and I have an InstaPot! Tx for the tip re boullion paste. I found a fab recipe on YT and now I have fresh boullion paste in my freezer ready for soups & stews etc - another thing I don't need to buy at the store! Re the "chicken" pot pie: if one wanted to put pastry on top (or even mash potato for a herbivore pie vs shepherds pie) would the two cook together or would you cook the veggie part first then pop the pastry on top and bake in the oven? I really do enjoy a pastry periodically. These are very helpful - thank you. More please. I do see via your playlist that you do have some international flavoured recipes - looking forward to exploring those. There's a Mesopotamian restaurant near us. They serve a great set menu (starters, mains & dessert), with a belly dance show on the weekends. It's a great evening out. I actually subscribe to a few Turkish cooking channels that offer great low cost vegetarian ideas, usually with potato (I think I eat potatoes most days).
