I always get embarrassed when people ask me why I became a vegan because it was for such a petty reason. Someone was complaining about how hard it was to be vegan so I was all like "I doubt it's really that hard" and I dropped cold turkey and have been a vegan for a couple months now.

JAMation. awww don't feel bad. I live a semi vegan lifestyle. I have watched factory farming videos but now I eat mostly halal and kosher meats. I eat dairy but also fully embrace and enjoy coconut milk and fake cheeses. I can't have soy cause I'm allergic along with most of my children. So yeah don't feel bad. I live in both worlds lol.

I'm not vegan but I've always been the type of person to try different foods and I really want to try all of those recipes. I love pasta so that's a + for me. Normally when I try something new and I really like it and it stays apart of my eating life like peanut butter stuck to bread. Lol But I'm seriously considering looking into it not only your recipe but vegan food in general because the understanding of the word vegan especially around my friends is looked upon as negative. I just think people just need a little bit understanding about it and my grandma is a vegan so that's a plus. I think for like 20 years now she's 75.

I literally just made the carbonara pasta and omg!!! it's delicious! I made some changes because I didn't have all the ingredients but nonetheless it was amazing! -Instead of the mushrooms I used one slice of smoked tofu turkey -instead of the tofu for the sauce I used chickpeas -instead of the soy milk used almond milk -instead of the cashews I used almonds Its my fist time watching your videos and I can't wait to try more of your dishes!!!

The first 2 look way too dry - some pasta water and a bit more olive oil to finish then would make them lovely and silky

Pasta itself is loaded with carbs. Olive oil as well as several other oils have many vitamins and nutrients in them. And used in moderation they aren't unhealthy at all.

I agree about whole wheat pasta etc. however, that's not what she used here. She used regular pasta. So a little olive oil isn't going to hurt the situation. The human body needs a certain amount of body fat to insulate the organs and provide other functions. If food is supposed to be palatable, sacrifices will have to be made. Realistically it's impossible to make a dinner that's 100% healthy, unless you grow everything you eat yourself. That way you can control pesticides, soil mineral and pollutant content, and the quality of care given to the growing plants. Compromise will always be necessary because we have taste buds to account for, as individuals, and as a greater ape :)

You should boil water first then putting pasta in the bowl if you let pasta stay in cold water it will be sticky afterwards. You could also add a tablespoon of olive oil in the boiling water to keep pasta slippery

Why the need to make it fit into a conventional, non-vegan recipe? Carbonara is basically wisked eggs, pancetta/bacon and cheese. If it's not gonna have none of those why call it carbonara? It is a creamy mushroom pasta with onion, it has nothing to do with carbonara at all not in texture, look and possibly in flavour. Just give it a different name.

I don't know, I think that giving it the same name creates the expectation that it's gonna taste the same while it doesn't, so it makes people feel disappointed with the recipe, although it could be a really good one. If you say well here's a vegan pasta recipe that you could try people may like it or not but if they want it to taste like carbonara they would probably think it's bullshit. Is just about how you sell it. For example I enjoy veggie burgers made from lentils or chickpeas way more than regular ones, but if I would expect them to taste like meat I would have felt disappointed. I tried them with the idea that it was something new and i liked them.

it's just a vegan version of Carbonara. Like, for example, I'm assuming you eat meat and other animal by-products, right? So, pig's meat is pigs meat, but why do people call pork and bacon two different names when it's the same thing, pig's meat. Pork. Why do people specify the difference between a chicken burger and a beef burger when it's the same thing, a burger. Two completely different tastes textures and whatever but people still call them both a burger. So yes, the carbonara will differ in texture and taste, but it's still carbonara, just vegan. So I hope I helped you understand why vegans, like myself, make vegan versions of animal-based foods amd still call it the same thing.

The gnocchi I find has either eggs or ricotta in it. I have made my own though. You just have to used mashed potatoes and flour and make little dumplings. I liked it with sautéed celery simmered in the pot with that and maybe some onions and or garlic. I use whole grain flour also. You can't go wrong with pastas and especially inventing your own sauces. I am thinking more towards pasta salads for the springtime.
