crystltwilight most pastas aren't made with egg, many things are 'accidentally vegan' when you read the ingredients and don't label themselves as such. Always double check though!

As an Italian, I really liked these ideas and screw those complaining about modifying our food, some of our most famous dishes are vegan! (Pasta al pesto, pasta al sugo, aglio olio e peperoncino, peperonata...) Also I really like the twist on the eggplant lasagna, which is actually a parmigiana ;)

I just recently tried an eggplant caponata and was completely blown away at just how insanely delicious it was...also vegan! And I've always been head over heels in love with minestrone (I love it best with chickpeas!)

tried the gnocchis just now and omg i‘m obsessed. Used Oat Flour and Sweet Potato instead of normal flour and potatoes and it honestly worked really well and tasted absolutely delicious 😋

Next time you make gnocci try to add very little flour, I don't remember the proportions but its not as much as you added, and try to fold it in, not keading like a pizza/bread dough. This will make your gnocci super light, airy and fluffy! You can make them with sweet potato too!! Chef Chloe Coscarelli has a great recipe for them, they taste amazing

Caitlin Shoemaker well it sure depends, on the potato and the way you cook it and such. But try it different ways in small batches and see which one you like better!

There are many versions of gnocchi. The ratio of flour-to-potatoes will vary greatly. Some recipes use eggs, some do not. I usually go with: 2 pounds russet potatoes 2 cups flour 1/4 teaspoon salt thespruceeats.com has a good recipe. Omitting the egg btw just means that they aren't as yellow ^_^ Edit: oh and you just roll them on the back of a fork to make the gnocchi marks.

I am currently trying to transition into a vegan lifestyle but it's challenging because my family doesn't really get it and they still buy me non-vegan food and get confused when I say I don't want it. Look up any som tum recipe, and replace fish sauce with soy sauce. This is every thai persons favourite dish, they even do it on thai michelin restaurants, even though it's ridiculously cheap. Google will be your friend, but Pailin who's a vlogger shows it on videos.. :)

In my mind, Italian Cuisine uses a ton of olive oil and seems quite difficult to attempt an Italian oil-free cooking, and seeing this video just got my MIND BLOWN. Brilliant! I've been getting great inspiration from your videos ( especially cause my husband and I are avoiding animal products and having a low fat diet due to health issues). Keep up the great work!

I made the #2 one the Alfredo, and it's really good but next time I will cook the garlic then blend it with the sauce. And a little more salt and pepper and it'll be perfect!

small tip, when you make the gnocchi and crush the potatoes, let them cool so it will serve less flour :) ps I'm Italian and I just love this video so much, unfortunately in Italy there aren't many vegan dishes. I am vegan and sicuramtw I will make some recipes of this video! ❤️

there is a news, in India, at least very recently that cotton oil is an additive in olive oil. Cotton oil is poisonous and creates cancer. I use "chekku ennai", meaning, I carry peanuts, or anything I want an oil off, I give to to a grinder shop and he gives me the oil under my watch

@@shauntelgill9384 Hi there, vegans are not trying to lose weight, alright! We are kind people who don't want to abuse animals and suck on them. We feed purely out of Plants, only plant based food is consumed by vegans. Now.... the oil part, some don't consume oil because there is cotton oil mixed with most oils. In the country am from luckily, we have people who would press the oil out of seeds and give it to us... it is called chekku ennai, this way, there are no adulterants added to the oil and the oil is pure.....

Why do so many vegan channels out there not use any oil or salt? One tablespoon isn’t gonna kill you, especially when making a pound of pasta. Sauté develops flavours so much more! And salt too! I feel like so much of the enjoy,ent of food is lost 😕

I was going to ask the same thing. It was so weird to me that she didn't use oil to saute and flawor anything. Oil makes food so much tastier, because otherwise is a bit bland. Furthrmore, oil, especially olive oil is good for your health, in right amounts, that is.

oil is saturated fat which raises the risk of heart disease. A little bit won't kill you of course, but many just go oil free. It's preferable to get fat from healthy sources like avocados and nuts.

I did one this week for meal prep it was cous cous with premixed herbs, salad consisting of just tomato and cucumber and a tahini potato salad. This was tasty af and very filling since I work long hours. These were ingredients I already had and since I didn't have time to shop I made these.

It's true that Italians get pretty passionate about cuisine and traditional recipes and can get offended over changes or things not being done correctly, etc (in fact, I was just following a long and heated discussion on why we are not supposed to cut basil, just as an example)...but even within the Italian community, every family has its own recipe secrets passed through generations and no two sauces are the same....so its hard to say there is only one way to prepare a dish. Though some things are universal, such as always salt the pasta water. :)

Great job on especially the eggplant lasagne. It looked really good and I completely didn't expect that I'd be so motivated to make it since it had no carbs in it. Really liked the pizza which looked gorgeous and the alfredo as well. The addition of zucchini to the cream sauce is interesting and I can't wait to try that. I just give you an advice from italy. Try to cook the tomato sauce with olive oil and onion or garlic and add salt and basil. They give more flavour to your sauce! and olive oil is a really good fat

Some of the leading doctors in the whole food plant based area are saying stay away from every oil. It is a very processed . When you eat olives you get the fiber etc. Not in oil. So if you use oil fine. She chooses not to use it and you want to then go ahead. Let everyone be happy.

Great recipes! Noticed in your gnocchi recipe, your potatoes looked ‘green’ before cooking. Potatoes should be stored in the dark, greening of potatoes is a poison that develops in light and can cause stomach upsets❤️✨
