I love to combine my sourdough discard, milk kefir, and freshly ground flour. Once combined it sits out overnight to really come alive and it’s ready in the AM to make waffles or pancakes. It’s always a hit with my kids and packs a fermentation punch!

Came over here just now from Heather's The Kneady Homesteader and quickly subscribed to your channel after seeing this video. I'm suffering from SIBO and most likely SIFO (Fungal Overgrowth). I just got Dr. Davis' book Super Gut and last week completed my first 36 hour L Reuteri, Gasseri, and Coagulans "yogurt". I, too, don't want to live the rest of my life eating Keto-carnivore and I want to be able to branch back out after my gut is healed.

Life got in the way and I dehydrated my sour dough starter. Now I'm on a 21 day day and had to slow my milk kefir down in the fridge. It's so nice to be able to store or fermented goodies and bring them back to life when needed.

When you were talking about your gut issues, you sound just like me and my problem. I too haven’t had bread without any bloating until I wanted to try sour dough. I have an active ferment going. I’ve made sandwich bread, pancakes and cornbread with it. I feed it a day before I use some of it. I then feed it and when it has risen, I place it in the refrigerator until I need it again. It’s a learning curve and another KZbin channel has the easiest method I have found. Since of the long fermentation time, my gut seems to be able to digest it. I will be watching your videos (I have already subscribed) and hope to get more ideas from you on the gut healing journey.

Great success to you & healing! I’ve done 4 batches of the L. Reuteri yogurt & love it! I do milk kefir, sourdough, kombucha & fermented veggies (that I forget to eat😉). Someone else may have mentioned this, or you may actually be leading up to it, but Einkorn wheat has an ancient different DNA (unaltered) and gluten structure than modern wheat. Better on gluten sensitive tummies. There are resources explaining how to use as a sourdough bread. ❤

I have such a hard time figuring out how to add (and remembering to grab for)fermented foods to add to my meals on a daily basis. I plan on making a ferment or two and leave them at the very front on my fridge so I always see and remember them. I really want to start incorporating them because considering I have an illostomy and I don’t absorb nutrients as well as other people, it would probably be a great thing for me. I LOVE my sourdough starter though! I’ve kept it alive for a year now. Just this last week I finally started dehydrating a bunch so I don’t screw myself over if anything were to ever happen to it. Sad I missed the live last night! Hope you’re doing well 🙃

I keep small quantities of some of my ferments in small jars in a basket in the frig.. various kimchi, dwaenjang (similar to miso), kefir quark (which I use just like sour cream etc). I add a tablespoon or so of each to a segmented relish plate (something that one might use for a olives, pickles, etc.) As a side note, those relish plates are so awesome for l kids meals as well. A dab of this or that with the main dish so they can taste and decide what they want more of.

Sauerkraut is delicious on top a sweet potato with grass fed butter. It’s also good atop scrambled eggs with raw cheddar. Lastly, very delicious atop a burger, even just the patty, with raw cheddar. I bet if I would be good on a homemade sourdough cracker (homesteading with the zimmermans has a tasty recipe) with raw cheddar too.

I definitely want to try making sourdough bread! Mary over at Mary's Nest suggests that beginners start with rye flour, so I ordered that online because my store didn't have it. I admit I'm a bit intimidated by it, bit not so much that I don't want to at least try. Amd kudos to your husband for at least taking your suggestion!

Rye is better for making a starter but it can be pretty overpowering to use the flour in bread, it has a very distinct taste and is pretty dense

This video just reminded me that I really need to get my kefir going again! Time to raid the freezer for my grains. I have been wanting to give sourdough a go as well. A 250yr old starter?? Wow, that's impressive, I would be nervous about ruining that one too! I haven't tried making sourdough yet but it seems simple. I really just want it for pizza dough because we like a lot of pizza in our house, so there would be no pressure for trying to make bread with it. I have never had success with a yeast bread ever! lol

Thank you for addressing gut issues on your channel!! I have Ulcerative colitis and every day is a new day to deal with gut issues that can vary widely! Some days I can eat "this", and then I can't. Pork seems to be the one meat I can have issues with and fruits and veggies I have to look at skins on them and the fibers that many are made of.

Oh goodness, that’s so tough! Have you tried organic pork? Factory farmed meat (especially pork) is pretty gnarly stuff, it could just be the byproducts you’re sensitive to? Produce skins are not great for me either! It’s all that darn extra fiber. Have you tried going carnivore for a time to find some healing? I’ve seen a lot of people be helped by it (myself included)

Are you making dr Davis yogurt? I’ve been making it for about a month and oh my I feel so much better. As long as I don’t eat dumb stuff. Next on my list is milk kefir. I’ve also been making curtido. I love it so much. I too have leaky gut and sibo. ugghh it’s a stubborn thing. That’s why I started making soap years ago. I’d just break out into a random rash it seemed and started any time I encountered certain things. Fragrance being a big culprit. Even smelling it. Eventually you will need to add in fiber to keep the good guys happy and then get all the post biotic. And ignore my first question now I’m far enough in the video to see you answered it. We love super yogurt. We been eating it every morning for 3 months now.We have been eating it with our homemade applesauce, blueberry and cherry compote. I was suffering from bad acid reflux and thought I have SIBO. I have been taking some turmeric too. Felt better but not totally 100 percent yet. I had bad sinus in my left nose too and what helps me was grapefruit seed extract and also sleep with diffuser on with thyme, oregano and eucalyptus. It feels so good to be able to breath better again. Love to learn to make some sourdough. I really want to repopulate our gut with probiotics. I want also to learn how ferment vegetables and salsa. Do you have some recipes? Thank you for sharing .

Excited to see your sourdough. I have been keto with a brief stint in carnivore(that was the worst really messed with my gut) for 5 years. About 6 months ago I started adding fermented foods to my keto diet, started with Kefir. Now I make my own kefir and other ferments thanks to you! I can tell I am getting better not just gut but hormonally. I just tried sprouted sourdough yesterday - so far no issues, my blood glucose had normal response and no bathroom issues. So I am being very optimistic. I LOVE sourdough so if I can add this back in with small amounts and it's fermented I think it will be great! What do you think of the Einkorn Sourdough? I learned about that from Donna Schwenk

We like it here a lot, super cool people and atmosphere. I would encourage him to take a SIBO test (usually available through a naturopath). It’s hard to say what you can make him but any ferment should help get things started, in VERY small amounts

It’s hard to recommend an Etsy seller because stock is pretty limited. What I did was search “raw cow milk kefir grains” (type in whatever type of milk you’ll be using) and search through the listings, read a lot of the reviews, and message seller with any questions. I chose mine because it had a combination of 6 different grain sets which makes the bacterial profile vast and strong.

And fermented foods fixed my circadian rhythms in a profound way. But I agree that being fat adapted is kinna ideal. I added potatos in small amount. If I lighen up on protein I can afford to taste more sugar. I guess? I don't know
