I love this! I used to make caramel that my mother taught me to make but you had to spend a lot of time stirring and cooking on the stove. A couple of years ago I learned how to make a six ingredients caramel using the microwave and I really love that. This is so cool to be able to easily can this and have it on the shelf for whenever I want it. I will definitely be making some of this. Thank you do much !!!

It was cheaper to get a 6 pack of Magnolia (Sam's brand (?)) sweetened cond then buy each can separately. So glad I can use most of them for caramel. Great idea! Thanks!

Yes, you could waterbath on a low simmer setting, I would keep my eye on it so not to scortch the Carmel.

I have a question, Jinnie. For you or anyone out there that knows. How long can you go passed the Best Buy date on sweetened condensed milk? I have a couple of cans that have gone 1 year passed their date. Are they still okay to use? How do you know when you open the can? Will it look funny or smell funny?

I have used it passed 6-8 months and its great, just shake well, if it looks or smells bad don't use it but I have never had a issue. If the cans good use it.

If you have a can of sweetened condensed milk hiding in the back of the pantry long enough, it will actually caramelize itself over time and look just like Jinne's when you open the can. It won't taste exactly the same without the vanilla and salt, of course, but is pretty darn good. And yes, this happened to me. 🙄 🤣😂🤣

I've been consuming cans in the past month with an exp date of 3/22 (I just discovered Vietnamese coffee; game changer!) They're still tasty. They have been kept in a cool, dark, dry environment, so I'm sure it helps.

Great idea! Do you know you can also make caramel by boiling an unopened can of sweetened condensed milk in water? I have a Caramel Pie recipe that is 25+ years old that taught me that technique. It doesn’t have the salt and vanilla but they could be added. I detest those pull top lids because of that lip on the can that makes it difficult to get all of the contents out and have even had some of my silicone spatulas cut by it. I saw a hack where someone used one of the safety can opener’s that open the lid on the side instead of the top. Game changer!! Now I do that too, so much easier to get all of that goodness out of the can😃. Merry Christmas!

Good question. This really isn't shelf stable then. Probably why others simply crockpot the cans and don't do recipe with jars. Good "please refrigerate" gifts.

8-10 hrs. Put it in the crockpot before you go to bed and it will be done in the morning when you get up, keep it on low.

She states in the video to keep the crockpot on low, with the jars covered with about 1/4 inch water or so, for 8 to 10 hours. Hope that is helpful. 😊

You won't find it on the National Center for Home Food Preservation website but they do say you can store an opened can of sweetened condensed milk in the refrigerator (3-5 days) or freezer (1-3 months) so that should be an option for this recipe if there is a concern about keeping it in the pantry.

If you mean by the NCHFP standards, probably not. Dairy's not approved for water bath or pressure canning. I'm not comfortable with the "shelf stable" claim of this recipe, but it's up to each individual what they choose to do. Personally, I'd make this recipe, but I'd refrigerate it when done and not rely on its stability long term at room temperature. I think this is physically safer than the cook it in the can version because there's more room for the product to expand while cooking. But again, each individual should do what they're comfortable with.

It’s so complicated:(. In my country we just boil cans with sweet condensed milk (for 2-4 hours), on an ordinary stove. When you open it you can add whatever you want. Vanilla or salt. And you don’t need any special pan or whatever. You don’t need to waste time. No, I don’t like this silly way to lose time.
