My son is brilliant at making mac cheese. He watched your video and decided to try this. We used pasta shells (what we had in the cupboard) and a strong cheddar cheese. Only other thing we added was some nutmeg. It was delicious. We'll be using your method from now on. Thank you David.

@@pododododoehoh3550 but the only real unhealthy thing is carbs. Fats (natural fats) aren't unhealthy in the slightest your body needs them along with protein to survive. Carbs on the other hand not so much since they indeed do turn into extra glucose which your body does not need.

Boiling pasta in milk in sweden is called ”Stuvade makaroner” which roughly translates to ”Stewed macaroni”, it’s lovely to att abit of nutmeg to it and serve with meatballs

I didn't know it was common anywhere in Europe to boil pasta in milk, never heard of this before. In Germany we only know rice pudding, rice boiled in milk as a sweet desser with fruits or cinnamon on top.

I made this adding 1/2 tsp of nutmeg, 1/2 tsp white pepper, 1 tsp mustard powder, 1 tsp of worchestershire sauce, 1 tsp of salt and 1/2 stick of salted butter in the very beginning while heating the milk. Thank you so much for this recipe! SUPERB!

Hey mate, thanks for the great receipe. Made this tonight for the missus and the kids, only thing we did different was 2L of milk, 750g of pasta, turned out the same. Added bacon pieces that I fried off and added at the end with the same red leister cheese from coles, they never had 2 of the 200g ones so added a handful of pizza blend cheese as well.. best mac and cheese we have all had ever !!!

Just tried this method for the first time, David. A packet of Kraft mac and cheese, rather than your shredded red Leicester; and two teaspoons each of chicken stock, Clive of India curry powder, garlic salt, and parsley. You are a lifesaver. The main thing which put me off this was having to do a roux and use two saucepans etc, but this makes it so much easier. My great thanks. This will become my own default method in future.

Thanks This was a great guide. I added butter, salt, pepper and garlic powder to the milk, to season it and help it not stick, then I figured I would burn it anyway and moved it to the instant pop and cooked it for 3 mins there, then dumped in my cheese assortment, aiming for the approximate number of grams you suggested. Was very tasty!

That's how I do it! The starch cooks the sauce & all I do that's different I transfer to baking dish sprinkle with bread crumbs extra cheese then grill to brow.

Just did this recipe and it WORKED beautifully!!!! Make sure to not skimp on the milk, the pasta cooking in it really does thicken it up and you need enough milk to properly cook the pasta. The biggest detail I noticed he did that I think is sorely overlooked is to make sure you use actual hand shredded cheese rather than that pre shredded crap they sell in grocery stores. It has a caking agent that keeps it from clumping but it takes longer to melt. And while it is easier, if you want it done right, take the extra second to grate it by hand. You will thank yourself

Awesome easy recipe. With this as a base, you can do so much more. You could add in a vegetable like peppers, carrots, peas, or broccoli. Also, you could add in a meat like chicken, beef, or my favorite bacon.

I tried this recipe a couple of weeks ago and it turned out pretty good. It's easy to make, but take the stir constantly part seriously or it will burn. I used sharp cheddar instead of the Red Leicester. I did add one more ingredient that the whole family agreed helped and that was 1/2 cup of freshly shredded Parmesan cheese.

this is a very great tip on how to make mac and cheese. I would use a bit more pasta and also some cubes slit ham but honestly it's a great starter compared to water.

It's a natural colour, which I believe comes from the cheese being partially smoked . It's one of my favourite cheddars, as it has such a strong, tangy flavour :)

Cheddar gets its orange color from Annatto, a natural orange-red food coloring derived from the seeds of the Achiote tree.

I have made cheddar and yes, it is white, the annato is a natural color from the achiote seeds, you boil the seeds and extract the color from them, then it is added to the cheese curd to gave it the orangy color. More seeds makes a stronger color.
