if you let the sugar coffee mix without water for a few hours it will naturally turn into a molases syrup, that is because coffee has oils in it and the sugar sucks them and turns into sticky paste same goes for sugar and citrus fruit peels

The leaking happens when you store it, not to worry. Once you use all the whipped coffee you can use rest of the liquid as decoction and make coffee.

Its just natural. Just take the mix from top and use initially. Towards the end you can mix all together and use it.
