Hi Gemma! This microwave cake is wonderful. I just made a cake in the microwave and some cupcakes in the oven and I can honestly say there was no difference between the two. They were light, fluffy and delicious. I even did a blind taste test with my family and no one could tell the difference. Okay okay okay. Let's get some things straight first. I altered the recipe quite a bit. Used 1 1/3 cup of sunflower oil instead of 2 cups of melted butter. Used 2 cups of white sugar and powdered it, instead of 1 1/2 cup white and 1/2 cup brown. Took 2 cups milk and added 4 teaspoons of vinegar to make my "buttermilk". And well, let's just say, I'M NOT USING ANY OTHER RECIPE AGAIN. It became so delicious, so soft and moist and spongey and beautiful in 3 minutes, why should I even beg my dad to get me a proper oven! Sure, it didn't brown on the top, but it doesn't matter because it's amazing and delicious and yes a bit way too white-looking, but amazing. Seriously. I'm not using any other recipe. By the way, the batter was so much, I made two thin layers of whole cakes, and EIGHTEEN heart-shaped cupcakes. Yum. From now on, I will make sure to buy every utensil and cake pan microwave-safe so that I don't have to wait almost an hour for it become ready to be in my belly XD. I forgot to mention, I also added some candied fruit, raisins, cashews, almonds and walnuts, all chopped roughly. Christmas cakes need to have them, am I right?!

I've noticed, vegetable oil instead of butter actually yields a softer, fluffier cake. I have made your chocolate cake too, which had oil and not butter, and it turned out beautifully!

Turned out pretty good! I even substituted Xylitol instead of sugar to decrease the sugar content and it really turned out great! No difference from the sugar.

Yes! Jim this will not be a problem here. (www.biggerbolderbaking.com/3-layer-cake-made-microwave/) write out the recipe, and then divide it, this is the safe way :)

Jim Kledis I would suggest making the 3 layers and frosting one. Freeze the other 2 layers separately and pull out, thaw n frost within 4-6 months. Great for short notice pot luck, sudden dinner guests or company, bake sales, funerals (condolences meals are still given in some family/friends circles) soup kitchens or food pantries or housing shelters and on and on...

Jim Kledis the layers are quite small so maybe just half? Or as the other person said make them all then freeze the rest for later.
