What exactly is in the dried fruits filling for the pithas? Nuts or fruits? Mixed with condensed vegan milk and that’s all?

When you say two tablespoons of cornstarch (for the jalebis), do you mean two tablespoons straight into the batter or do we need to make a corn starch slurry? :)

You can do both, but I would suggest to add the corn starch to the batter straight and then adjust the water consistency later, because we need the batter to be little thick and not watery.
