Tracy I’m sure you’re done this before but whenI have too many tiny tomatoes ripen all at once. I just pop them in a ziplock bag once their washed and put them in the freezer. The peeling will just peel right off once they freeze. Then you can just open the bag up and grab a few out and drop them in whatever your cooking. I also make salsa out of the entire tiny tomatoes peelings and all. I especially like the Juliet tiny tomatoes. They produce lots of tomatoes and aren’t as small as the sweet 100. I need to try the mountain vineyards.

@@justdigitfarmsI do this every year. My tomatoes always manage to go in the ground staggered, which means they don’t always come off at the same ripeness at the same time. And while I do cook with them all year around, even in the summer months, I know I can freeze them all at the same peak of ripeness, even the cherry, sun gold, & grape tomato varieties. This year I planted a few Brandywine variety tomatoes. They taste wonderful; however, I’m not keen on how they grow. I guess I’m spoiled from growing Parker’s Whopper, Better Boy, Roma, & San Marzano tomatoes, in addition to the small cherry/grape tomatoes. I really hoped to actually get a chance to sun dry tomatoes this year. Sadly, we’ve had high humidity all season. I’ve even had to dry out my sunflower seeds indoors this year. I’ll be roasting more of them soon. The mammoth sunflowers have grown beautifully. All the sunflower varieties did well this year; they did so well that I’ve been able to share a few sunflower heads with the birds who stop by the gazebo fly-thru feeder. 😊

Short season zone 3 Last frost June 1 First frost September 5. Have lost beans, squash, pumpkins in first week in August to a frost. 3 years that happened. Last yr was my first yr to find a recipe to use my mixture of 4 diff cherry tomato varieties. I basically did the same as this video but my hubby helped me to cut all the tomatoes in half, coated in olive oil and layer them on my largest cookie sheet in a single layer. I baked them @ 375 for 90 min on the middle rack in the oven. After they were ready I put them in a different container to help them cool down so I could put in my food processor while warm NOT HOT. I puréed them skins & seeds. I seasoned with Redman’s Real salt, all my own herbs, basil, thyme, oregano( all the seasonings that are in Italian Seasoning) I then put this in 1 C containers to freeze(pizza sauce) for personal flat bread pizzas for hubby & I. Can’t wait to try them this week! Well that pizza sauce is sooo good. I tasted it after I made it. I think the mixture of 4 different tomatoes I had is what did it!!! Red Sweet 100, A variety that was a bigger than cherry/ salad tomato, grape variety, Sun Sugar yellow variety. This was my first time with this yellow cherry variety and it’s a keeper for sure. It will replace my yellow pear Tom! So sweet and juicy. Yummy! It’s a wonder I even had a surplus to do this with cos I picked them and ate them like grapes! Lol So so glad I found a use for a lg harvest of the cheery tomatoes!

Hi! First time viewer and new subscriber here!! Watching your video made me want to try these recipes. With that being said, I wanted to point out a discrepancy that could affect the food safety of the canned tomatoes. I went to the link for Mama Hoss’s recipe and she added 2 T lemon juice to each quart of the canned tomatoes when she added the hot water. You did not have that in your version and I fear it could affect the safety of the final product long term. I hate to be “that person” and I’m pretty laid back in all regards except for food preservation safety. Please know this comes only with good intent. That’ll you again for your wonderful video and I look forward to watching all of your library. ❤️
