i grew up growing okra .. i absolutely love it cooked almost every way you can think of ... i was taught to pick when as long as your thumb or your pointer finger for the best taste and tenderness , you will miss some every once in awhile lol and when you do .. if you can still push your thumb nail through the skin it is still tender enough to eat (in most cases) the thumbnail test is usually the best .. then the next test is .. if your knife meet ANY resistance then it should be given to the chickens because it will probably be too fibrous ... but i do love your video and i want to thank you for sharing your wisdom with us and the different ways to preserve okra

Yes this is the way I do mine. Sometimes I freeze whole but make sure you cut while frozen or you will have a slimy mess. Blessings from Texas.

Definitely love love love pickled okra. Once I tried to do a raw ferment with okra and made the mistake to cut the stem end off... Big mistake... The whole crock went off!. This is my first year growing okra and as soon as you pick the plants jump taller and make more to pick 😊

BOOM! I just found some gold in the way back machine! Very good video. Lots of tips on okra and issues with it. Now I know how to deal with it if I have to slice it with a hatchet and how to deal with the slime. I am not a fan of the green slug so that tip ALONE is 24k and more people need to hear about it. You must have heard me admit in my recent garden tour video that though I grow a lot of okra (because it's so pretty and just thrives here!), I don't actually USE it. ☺️ I've never found a way to cook it that I like. Thank you, thank you, thank you for educating me so thoroughly about this vegetable - and for giving me options! Two important things I learned that I've never heard anywhere else are (1) don't cut off the tops when pickling to prevent a slime jar, and (2) use vinegar in water to take away the slime before processing. Wow! Great info and presented very clearly. Again, thank you! Now I'm off to harvest and USE some okra. 😊

Okra plants and flowers are truly beautiful. And so easy to grow. I hope you do give okra another chance. Once the slime is out of it, it really is quite tasty. I have to giggle a little. I'm listening to your homestead video while i answer my comments. LOL I have never done that before.

I came down to comment that I had never seen black olives in a jar either,(like green olives). And what do I see? Olive City Homestead. I will eat it fried, if its not slimy, but the only other way is in gumbo, and there is not so much of it to make the gumbo slimy.

@@teenapittman4241 I'm with you - no slime for me! ☺️ I preserve some of my olives green and some black. They are fully ripe when purplish-black, so the timing for them is tricky. You don't want soft olives going into the jar - that leads to you-know-what.... slime! 😮☺️

Pick okra when 3 to 4 inches long. Steam for 20-25 minutes in steamer and no slime. 3-4 inches is perfect for pickling also. Fry those you miss unless it is too hard. You can also freeze whole on trays then bag, thaw and slice as needed. With okra the more you cut it the more it puts on. You'll have more than you want. Also cut the big leaves so you can see it. Pruning it makes it put on more and more. jmho

I've never canned frozen okra. I pickle it fresh, or freeze it for cooking. It gets mushy after defrosting. Great for soups and casseroles.

I let the large woody ones dry out. Harvest the seed, store it in a freezer bag in the freezer. Seed for next year. FREE
