I'm a gastronomy student, and we did that chicken ballottine in class, but with a twist: we couldn't cut it, we needed to debone the chicken without hurting the skin. (We almost cried when she told us to cut the back, it's been like 2 hours trying our best and she just: ok, I lied to you, you need to cut it.) We needed to put our hands inside of it and keep loosing the meat away from the bone, it takes a long time but it's an unique experience. And if you ever want to try doing it, you can also fill the chicken up without cutting it, it's really good. Obs.: When we buy a whole chicken here in Brazil, it's really common for it to come with the head and organs, they are usually not attached, but in a little plastic bag inside the chicken.
