These kinds of desserts aren’t usually a big focus on the Mediterranean diet, but every once in a great while, that perfect peach or bunch of grapes just won’t cut it. When it happens to you, go ahead and enjoy this creamy custardy Spanish treat. Plus, it was the most fun I’ve ever had with a flamethrower! XO Caroline

The preparation of this cream is similar to the diplomatic cream. Thanks for your tips.

Hi David! This is such a Spanish classic and so easy. My favorite trick was learning on to make a perfect caramelized top from chef José Andres! Cheers, Caroline

Hi! I apologize for not answering sooner but I took a full week off from YT for a little break. I think it might be a bit challenging to use the broiler but worth the try. Good luck with it! Cheers, Caroline

eggs are too expensive to use 8 egg yolks right now--but maybe in the future...thanks, dts/usa

I totally understand. I created this video when eggs (and most other groceries) were a lot more reasonable. Like you I’m looking at things differently now and looking for healthy ways to economize. Thank heaven for beans, lentils and other low-cost sources of healthy protein! Cheers, Caroline

This recipe has the wrong measurements...and you said, try the consistency after boiling and offer no measure to correct the exceso amount of milk you are using
@mediterraneanminutes8 ай бұрын
Hi Maria - I will investigate it and get back to you. This is the first I’ve heard of a problem but I will be sure to check into it.
@mediterraneanminutes8 ай бұрын
Hi again Maria. I went back to the recipe and realized my instructions are not as clear as they could be. The amount of milk is 4 cups as I stated, so that first amount to mix with the cornstarch is simply a part of the 4 cups, not extra. And the idea of chiecking the consistency with the back of the spoon is to make sure is coats the spoon as I show in the video. If it hasn’t reached that thickness, continue to cook until it does. Hope this helps and my apologies for not being clearer… it was one of my early videos and I was on a steep part of the learning curve! Cheers, Caroline
