I have the same combo. Amazing results from these two, they pretty much cover everything. Enjoy your new stone!

I sharpen a lot commercially for everything from knives, scissors, razors, planer blades to other tools. The price for these is ridiculous. I run mostly all Naniwa, all all the Chosera stones, the 12k super stone, as well as Naniwa brick size stones in 150 and 220grit as well as a few others. I also run the Naniwa Diamond which are expensive but not to this point. This Dan guy is trying to get rich fast.

Definitely overkill for me, but I'd imagine these are solid gold to someone like yourself. The speed, ease of maintenance and longevity of these are an order of magnitude above the resin bonded naniwa diamond stones and multiples over ceramics.

These stones look great!! It's been a year now, was curious if you still love these stones? Also was wondering if you've had to flatten them yet? Thanks!

The 400 is my all time favorite stone, hands down! I like the 3k and it’s definitely the best higher grit diamond stone I have but I could live without it. I have had to dress the 400 once with the included alumina stone. It wasn’t really out of flat but loaded up. That’s hundreds of sharpenings per dressing. Incredible stuff! The 3k loads up pretty quick relative to the 400 but much longer than a resin bonded stone like the Venevs. You’ll notice the performance drop off a little after maybe 10-30 (honestly not sure exactly) sharpenings. 30s with the dressing stone and it’s back

I wanted a coarse one, but Triple B is out of stock, so I am going to try Atoma... My old Venev stones are great except they can get gouged when the knife is sharp.

The resin binder isn't super hard so I've had the knife edge dig into the surface of stone if I'm at a high angle or accidently raise my angle suddenly. Not super common but it happens now and again for me

@@arturv83 Like the knife cuts into the stone as if it were hardwood, and it makes a small concave spot. Maybe the stones need to be flattened? On a whim, I took a card scraper to one of the higher grit stones, and that actually seemed to help.

Back before the war 2 good diamond companies were Venev and Poltava. Guess what ? Poltava has been bombed ( Ukraine diamond district) and Venev don't know if it will be imported anywhere :(

Agree on the simple stone progressions. All of my kitchen cutlery as of late is either touched up on Dan's soft -> Dan's Translucent or Hard arks, or if they need a little more it's Venev F240 -> F400 with minimal finishing on the Dan's finishers. Amazing bite'y edges for the kitchen that last, which means a lot as a professional kitchen peep.

For a long time I’ve wanted to try out a Dans black surgical stone but haven’t taken the plunge. The 400F Venev edge is a really nice balance of refinement and bite. I’d be curious if your diamond edges seem to last longer? According to some research and my own usage they seem to add maybe 10-15% of life to the edge even with non high VC steel.
@kevindeuschle3413
@kevindeuschle3413 Жыл бұрын
@@EngineersPerspective701 They definately seem to. I benched all my naniwa choseras, and suihiro stones when I took the plunge to go all diamond just so I could get a good grasp on them. I've got a set of the ultra sharp plates 600-2200 grit, and a full venev c100% set and the edges off diamond with a bit of refinement on the arks are hair popping sharp but retain most of the ultra aggressive bite that diamond seems to leave. In a kitchen situation it really seems to add a considerable amount of edge longevity as we're never cutting anything overly abrasive. What I love the most about the arks is what most people complain about, they're on the slower side, but when all I'm trying to do is refine the diamond apex a bit and make sure I'm burr free without the need for strops this is a huge plus. I can fine tune the edge without over polishing and the super hard clean surface of an ark leaves a very very crispy apex. I love em.

Im thinking about getting the 400 stone, how do you think the 400 and 1000 stone would work together instead of 400/3000?
@EngineersPerspective701
@EngineersPerspective701 2 жыл бұрын
I think they would work great! The reason I went with the 400/3K was to have the minimal number of stones that would do everything I wanted. Whereas as a single stone the 1K is probably the most versatile overall. The 400 to 1K jump is probably better for scratch removal especially for the higher hardness/carbide steels.
