They were so good! I just picked up a whole NY strip slab. I’m going to dry age that one as well. Maybe 75 days this time.

Did they have that “funky” taste?

The 35 day didn’t give it a huge funky taste. There definitely was a lot more flavor though. They were amazing. I just did a 100 day NY Strip video. Those had some more funk to them. Also very delicious if you like the dry aged steaks.
