I think the gluten in the flour makes the wrappers flexible and strong. They might break apart with gluten free flour

In Mauritius also we use this type of sheets which we cut into rectangular shapes and put the filling for samosa. Mauritian samosa is very crunchy and tasty too. For the fillings we have various choices like potatoes, cheese samosa, fish samosa or chicken samosa.

These methods look so complex - especially the saucepan and cloth method Why not make a smooth batter and pour in pan and cook both sides ? Even rolling out 5 at a time is a good method but should remove each layer whilst still on the hot pan else it becomes difficult
