Thank you so much for teaching us how to make these recipes. The pre-made packs in my country are relatively expensive so these are great to prep all at once and put them into the freezer. My Mum is in hospital at the moment as she was scheduled to have hip replacement surgery however she had a really bad fall in the shower and couldn't move on her own. I'm under the care of an amazing palliative care team (my local hospice is literally just around the corner from my house). Ten years ago when I was 32 my doctors gave me 2 years at the most to live. The Lord has blessed me with so much more time with my family making more memories however I'm bedridden 90% of the time now and very weak. I've had to wash, move, take mum to the toilet etc and it's been hard on both of us but the Lord gave me the strength needed. The one time that Dad helped her shower she had the fall and I felt guilty because I wasn't there but I was too dizzy and in horrific pain. She is in hospital now and because of covid we can't go see her and I'm so worried. I have aspergers and I have had to explain myself with long winded descriptions lots because I feel like I'm lying by omission if I don't. What I'm trying to say is thank you so much for making my day better. I can now prepare baking mixes so that I can easily make muffins etc for my parents. My Dad loves muffins so I'm going to try your recipe and put the rest of the mixes in the freezer for another time. Thank you again for being perfectly you and sharing your life with us. Your channel is where I go to see a friendly face and to learn a lot. By the way I just watched your big meals fundraising video and Naomi is such a beautiful young lady. I love her hair and positive attitude helping out when she was greatly needed. I can see the Lords light in your family which can be rare these days even amongst fellow Christians. You are all in my thoughts and prayers. Xx

Here in the deep south we use buttermilk for our cornbread. I also use self rising meal and cook it in a seasoned cast iron skillet that I only use for cornbread. Of course we are all about cornbread with greens, peas, steamed cabbage, squash, etc.. Old southern cooking.

Very nice. Personally, would omit the lard until needed to make if keeping long-term. Am into having all kinds of mixes on hand...puddings, taco, ranch dressing, tomato sauce, onion soup mix,etc. saves money and you don’t deal with preservatives, get larger portions, and store for a long time. When you put them together, you realize the ingredients you need to have on hand to make them yourself. Even deydrated salsa and ground into a seasoning...so good. Keep up the videos. You are full ideas, energy, and just a nice person. Don’t know how you find time for yourself in between everything You do!

I've done something similar for Christmas gifts. Layer all the dry ingredients into a pretty jar, cover with a lid and gingham material tied with twine or ribbon and hand write the baking instructions on a little brown luggage tag and attach to the jar. They're always appreciated.

So happy to have shelf stable mixes. We found that adding a teaspoon or so of vanilla to the muffin mix at the time of mixing really helped the blandness as well as adding fresh blueberries tossed in the mix to prevent sinking & topping with brown sugar. Just really grateful to have these ideas shared.

Just got my 6yo started on the free trial. I like that they do not ask for your credit card so they don't charge you when you forget to cancel. She has been "playing" for about 20 min. and seems to like it. I like that it keeps changing activities so they do not get bored. They change up the same material so it doesn't seem like they are doing the same thing over and over. If she continues to like it I will buy a subscription.

You could use milk powder in the pre mixes, so later you'd be adding water rather than milk. Even cheaper.

dollar tree sells round plastic containers with small handles like a basket. It makes a light-weight mixing bowl for mixing large amounts of dry baking ingredients. Much easier than using a metal mixing bowl.flexible. too. When I 'm being good and weighing rather than measuring, it works great on a kitchen scale.

Of course you can, actually I was a bit surprised that the shortening was put in the mix because I would think that it can go bad if you let the mix sit there for too long. In France store bought mixes always require you to add eggs, oil/butter (we don’t have shortening) and eggs if necessary! :)

When I make up large batches of mixes I use the 2 gallon bags you can get from the dollar store......also great for cut up watermelon......You only get 5 per box but very easy to rewash.....holds lots of food for freezer or frig for large fsmilies
