I'm sure everyone knows this recipe for peanut butter cookies but it's the 1-1-1..1 cup of peanut butter, 1 egg and 1 cup of sugar. And you can double it or triple it. It freezes great and as a single mom of man children it's always a hit and frugal. Not sure if it's ok to share recipes, I apologize but I figured for the holiday season or on any day I thought I would share! Totally making your cookies for the holiday XO

Jamerril you do have energy. I am 60 and am told the same thing. After work I take a 1 or 2 hour nap. I cook, clean work 7 hours with special ed students and bake put flooring in paint inside and out yard work I think we look energetic because we plan well and are focused on what we need to do and we are full of Christ which makes us seem energetic

I love sitting at a window early in the morning looking out to watch the world wake up and drink coffee or tea! I am 64 and have done this as long as I can remember! You making all those cookie balls reminded me of when I was in Jr. High and working in the back room of the bakery my high school sister worked in. They shoved me in the back because I wasn’t technically old enough to work but the owner needed help making Christmas cookies! I rolled cookies all day.lol Then the next day came back and bagged them all up in cute cellophane bags with ribbons! Then gave me a little cash! When I was older I worked there all through high school!

I used to make a lot of these when my oldest 8 kids (9 total) were all home. I would double or triple recipes. Froze dough and baked cookies. Still do but on a smaller scale with just 1 at home.

Tip: If you want to freeze them for a while add 4 ounces of cream cheese when you cream the butter and sugar. They freeze magnificently with it and, as an added bonus don't lose moisture in the freezer (as some cookies do when frozen).

I've got a great tip for softening butter without melting it! Fill a bowl with lukewarm water, cut your stick of butter per tablespoon, place in the water for 1-2 mins, then drain the water!

I want to tell you I have had my Kitchen Aide mixer (both stand and hand held) for eleven years now and they are both still running great. I have never had a hand mixer last that long before. Love all your videos. I have made lots of freezer cookie dough too. One thing I've also done is pressing the dough into a cake pan lined with plastic wrap. Freeze in the pan. Then remove the frozen dough and cut into squares before baking. Either way love having ready to go dough! Thanks for sharing and Merry Christmas.
