I really want to tell chef Ayesha that I APPRECIATE her cookery skills more than anything. Never have I ever experienced such admiration to a cook before. She's perfect in every way. As a Syrian, I approved her Shawarma recipe, and I now approve her Kebabs. She knows what she's doing with them spices, she's got the character, and she's definitely highly educated herself through travels and all. I wholeheartedly appreciate you, chef Ayesha. You're doing it just the way it should be.

Level 2 had a very interesting recipe, salmon kebabs huh even the marinade and sauce was quite exotic. Level 3 is typical middle eastern recope

Pretty sure level 3 tastes the most delicious because of the Spices and that's how kebabs are made. Level 2 was Indian but it's not a Indian recipe their was no chilli powder, it was a completely different recipe with the Orange juice and pomegranates. Indians use the same spices and make the Kebabs like Level 3. I don't know what kind of cuisine the Level 2 Aunty followed.

so we saw American BBQ, Indian BBQ, and an Americanized version of the middle eastern Kebab, all named Kebab .... the differences of original middle eastern Kufta Kebab are as follows: 1- grind some meat and some fat, mostly a 4/1 ratio, and make ground meat. 2- more parsley, the meat would look greenish like an alien mossy meat. 3- the meat is not left to rest, it is cooked right after it's shaped. 4- it's cooked on charcoal bbq firepit, the fat that will melt will leave small spaces in the meat making it fluffy, and when it falls on the coal it will leave an amazin aroma that torments vegetarians in the middle east :P 5- the side dishes are usually pickles of various types : cucumber, garlic, and small peppers. 6- no olive oil needed. 7- you can make it from lamp, goat, beef, or even chicken. 8- Shatta is a weird addition to Kebab, usually it goes with lighter foods like salads or hummus, you can bbq some whole green peppers if you want the extra heat.

Kebap's lamb should be grinded with special technique: called "zırhlama" in Turkish. It's basically cutting meat into tiny pieces with two curvy knives. That's the main difference between köfte and kebap. And believe me when I tell you it tastes unbelievably better with the "zırhlama"

Actually it is the fumes from the onions which makes people cry. You can avoid inhaling them using a face mask.
