Can I just say thank you so much, you've saved me from tearing my hair out. I've been making buttercream cakes for years but recently I've become more and more frustrated at the little air pockets appearing all over my cake when I'm scraping. Today I made it using your method and et voila it spread smoothly onto my cake with minimal scrapes and I'm just in shock I could cry. Thank you once again xx

I'm so happy you like it! I used to have a bakery in Costa Rica and it was hot there too, so i used half butter and half vegetable shortening so that the frosting would hold its shape and not melt on my cakes and cupcakes.... maybe that would work for you too?

You can use one of those stencils, just 1 sheet to cover your mixture, or just a simple piece of fabric while stirring. I really love your videos!!!

Τhe problem is that the icing sugar sometimes doesn't melt and you can feel it between your fingers.Does it matter, or gradually it will melt? Thank you so much. You are great by the way and you explain everything so nicely.

Hmmm it doesn't really melt, it just gets absorbed into the butter as you mix it. it's a very fine powder - look for "10x" on the packet which means it's been sifted 10 times so it's really really fine. If your butter is at room temperature, after you add the milk or cream you shouldn't have any lumps or graininess but if you do, try another brand of icing sugar

I have always had an issue with frosting! I almost never can tell when it is perfectly smooth versus too dry or too wet. I also don't know what causes it to separate. I also don't know if you are supposed to be able to pipe thin lines with buttercream or if those size tips are meant to be used with royal icing? Every time I pipe it seems like I have to use an exorbitant amount of pressure OR it's too soft. But I can never eyeball the consistency in the bowl - so I don't figure it out until I'm already piping! The "air pockets" tip is fantastic!!! Also, so is your voice. I could just about doze off listening to you say "buttercream".

I'm not sure which piping tips you have but you should be able to pipe thin lines with buttercream - if the lines are breaking apart as you pipe, try adding some milk to make it a bit less stiff.

I'd be grateful if you could teach us other kinds of quick-and-easy frostings. In my country people don't like buttercream. The weather is humid and often hot, so I'm in big trouble when decorating!

That's a great idea but since buttercream is stiffer I think it would deflate the whipped cream, destabilizing it. You can cut down on sugar a bit by adding less and then not adding the milk/cream at the end
