We really had fun making this tutotial and we were surprised ourselves on how they turned up. A QoHCC Buttercream recipe (can be found on Red Velvet tutorial-link below) is a crusting type of buttercream-meaning, the surface dries up a bit and develops a crust. Using this BC, you can do more techniques with it.
But with these Glossy BC recipes, they will never crust. They will remain tacky/sticky as it does not have a solid ingredient like cups of icing sugar. However, personally, we think that these two recipes are really good and friendly. It is not temperimental like the Swiss Meringinue or Italian Meringue BC's but taste and texture can be comparable to both. Another advantage is, it is egg free. 😄
We really hope that you enjoy this video as much as we did. We learned a lot ourselves because we always use our own QoHCC recipe due to stability and versatility...BUT, we think we would be using 2 recipes from now on. Covering can be QoHCC bc, then some decorations can be this glossy buttercream. 😄 We will keep testing both recipes when we hold classes in different countries.

Ingredients:
Glossy Buttercream (Condensed Milk aka Russian Buttercream)
1cup/225g-250g (1 block) of Unsalted butter (2 sticks butter)
1/2 cup - 113-125g of vegetable shortening
397g - 14oz of condensed milk
Glossy Buttercream (Dissolved Sugar)
1cup/225g-250g (1 block) of Unsalted butter (2 sticks butter)
1/2 cup - 113-125g of vegetable shortening
150ml of water or milk
300g or powdered sugar
Note: the lesser the water content, the better, you can maybe reduce to 100ml water/milk instead. Beating is also longer in this method. Make sure to add the syrup slowly and small quantity at a time and let it incorporate first before adding more. If still not incorporated well, chill for few minutes until slightly firm, then beat again until incorporated.
You can also reduce the water or milk to 100ml or even less as long as the sugar is dissolved. We find that the less water, the less likely it will separate, less likely you will panic too! haha

Sounds & looks yummy/good.. you showed making roses; how stable is this to fill and cover layer cakes or is this only good for decorations like roses etc.

Tried and used less liquid, about 80ml. And mixed the liquid in the powdered sugar instead the other way around, it was much easier! Salamat sa ideas mga ganda! xxx

You ‘sift’ dry ingredients (ie flour), but you ‘strain’ liquids through a sieve (pronounced ‘siv’) to remove lumps.💐👌

Thanks Naleni ❤️ You can use just all butter but it won’t be as stable. You can use half cup or 1 cup of shortening..add to the butter, not replace. Hope this makes sense 😬🤪

Does storing in refrigerator or freezer ( long time) change its structure. Although I had used it refrigerator stored but want to ask from expert 🙂. What's the best method to bring back same consistency?

Thanks for sharing the recipe. I tried both but when I put the cakes in the fridge to cool the buttercream looked like it was separating watery to look at please help what could have been the issue ?

This looks delicious! BTW, I have one of your books, 100 Buttercream Flowers, and it's an amazing book! I want to make the one with dissolved milk, but using cream instead of milk, and I want to mix the milk and sugar then let it chill overnight. Will this work well? Also, can I use all butter with no shortening if I increase the butter by 1/2 cup?

I just found your recipe so I tried the one with icing sugar and could hold the flower shapes. Later on just under 1 hour, the buttercream became soft and didnt' hold the shape any more. I'm sure that nothing went wrong while making the buttercream. I live in UK and it's winter now and heating was off while piping. If you can suggest the solution of this, it would be great! Only one thing, I can think if my warm palm could melt the buttercream???? Thank you :)

Any type of buttercream will definitely soften with the warmth of your hand when piping so you can prepare 2 bags and interchange with the one in the fridge when one gets soft. You can chill it again when it becomes too soft before piping. In case you overdo chilling, you can use a hand mixer to beat it again for few minutes. Hope this helps x

the amount of powdered sugar here is 300g. lesser than the buttercream used in red velvet cupcake which is 600 grams but same amount of butter and shortening. does the BC used in red velvet sweet? or can i cut it down to 300g? thank you😊

Hi I'm great fan of your buttercream. It really taste and look too good. Can I ask please what is the best temperature of the this buttercream to pipe flower. Because when it is hand it start to melt after sometime in hand.

Thank you, you are so sweet. It is very typical for buttercream to melt when you hold the piping bag. We always prepare 2 bags of same colour. When one starts to become soft, we swap it with the one in the fridge so that there is no waiting time ❤️ Hope this helps! 😊

Jannah Savidad Both of them have the same consistency which is very smooth and so easy to pipe with...but the condensed one is more stable than the smbc. 😊

You girls are so fun to watch! I'm definitely going to try the condensed milk version, I actually wish I had seen this yesterday! My daughters and I were doing epic baking escapades and we ran out of powdered sugar! I'm like, "What in the world? How did *I* run out of powdered sugar??" I did have some frozen buttercream so everything worked out but since we were doing some crazy experimenting it would have been fun to try a new frosting recipe too. My Veggitable shortening is a bit grainy and no matter how much I whipped.. they remained in my buttercream :(.. what can I do to get rid of those grainy texture I heated the whole mixture to melt away those grains and put back in refrigerator for 15mins or so and tried whipping it but no much luck Could u suggest what to do?

We have not really tried the Chocolate verison but we think adding cocoa powder is better than adding melted chocolate so it would not be too runny. Hope this helps.

jnbnie it can definitely sit at room temperature but still best to refrigerate like any other bc’s. The cake we did at the end still is on display at our mini studio/dinning room for days now 😂

We don't really use fondant but we suppose you can..a thin frosting would do.

Btw, The last week I made a BC frosting using the powder sugar,shortening and butter but i did not add some water/milk on it, ang nangyari sa frosting ko ay naging semi fondant ang result. And now na napanood ko yung video niyo, dapat pala lagyan ng liquid (water/milk). sayang late ko nakita videos nyo.

T R T It depends on the brand of shortening you use. But technically, since you use only a small amount and with the sweetness of the condensed milk, you hardly taste it.

Thank you, I tried the dissolved sugar one and my buttercream do not look as silky as yours, it looks hard and separated a little. Any suggestions what went wrong?

Hi Claudia..try beating it for few more minutes until they incorporate. The dissolved method takes longer beating as water is not thick as the condensed milk. Beat longer..if still not incorporated, chill for few minuted then beat again :) Do let us know how you get on.

Actually I think my butter was too cold, I am in Canada so room temperature is different, LOL. I heated it up a little bit and beated it again looks much better now. Thank you. You guys are awesome.

Oh no..lard has some smell and taste and not healthy..vegetable shortening is common in any groceries and baking supply shops. We used vegetable shortening here.

It seems like you have either over beaten it or needs more beating.. It needs to be fluffy..

Esper Delcorro Yes of course but Crisco tends to be lumpy so beat it on its own until soft and lump free then proceed steps as normal.

You will have to chill the cake and wait until it is hard enough before you can be able to paint on it with lustre dust mixed with rejuvunating alcohol.

Handmixer is ok but it would take a long time so just be careful that it won’t overheat.

Overfelt97 Depends on your taste preference but we used about 2tsps here..you can of course add any flavour. Well noted on the background music. The file was accidentally flattened during editing before we could adjust the music 😬 Next videos will be better ✌️

This is pretty normal whatever type of bc you use. You can prepare 2 bags of same colour and one is in the fridge..when one starts to become soft, you can swap it..or some people wear gloves. Hope this helps 😊

It depends on how thick your filling and cover is but 2 batches should be ok. Just double the recipe 😊
