Hey Everyone!
I'm getting caught up!
I posted this chicken loaf on Facebook and have only just got to the footage of it, if you watch (or skip) to the end, I talk about cost versus reality of making it as awell, but it was oh so tasty!
I also am finally happy with my 'French Bread' recipe and wanted to share it!
600g Water
20g Yeast
10-50g Sugar
20g salt
100g Oil
1kg Flour
I place it all in my kitchenaid bowl in that order and knead till silky and coming away from the bowl. This dough is very forgiving!
This will make a total of 1800g of dough and it is up to you on what size you want to make your sticks. I go for 225-250g for the ones shown.

Oh my gosh, you seem to have endless energy. I love the bread recipe, I will be trying it when we cool off. The chicken loaf sure is great to have on hand to feed the family easily and much healthier than anything that we would find in the US. You are incredible. 😊

Spam is made using pork! I hate chicken loaf as well! More gelatine than chicken! That bread looked delicious! Just needed butter and homemade jam! Yum! Your hair looks great!

You could stretch it out further by adding milk to thin the mix, some egg white too then tapioca/potato starch to bind it back together and chicken stock powder, maybe msg, some pepper, add herbs + spices if you like. You could probably make a soya mince version with chicken stock powder.

Definitely could, but the purpose is to have less of those fillers really, more just meat rather than the fillers, otherwise I could just buy the stuff from the deli :). I looked and it’s apparently 66% chicken so prob has a lot of those fillers in there :)

Love the Guinea Fowl at the end of the video they were wanted a chat next show us your flock,do U collect the eggs and use them for eating... Spam or Devon is pork which my father always said leftover meat on the floor... U want would be nice pork with veg's in the loaf whole...so u would have to mince it then mix frozen or fresh veg's in your mix... Beef would be good as it used it like Roast Beef Sandwiches...or Fish would be cheap and interesting...steam it them panfry it for the fish... Want about wholes chicken place or a chicken factory...we have one at Ourimbah Central Coast NSW... Goodluck with it...have U got the stove yet...give us a look at it...😂😂😂please...

Loving all the videos, loved these recipes too. Could you use some sort of clean filler to stretch the meat to make it more cost effective ( rice or oat flour,homemade breadcrumbs ??) have you ever made beef paste not sure that's even an Aussie thing 😊😊 pate is really easy too but not sure if that's complicated for the dairy free conversion ( or if anyone would like it) Would love to see pictures of your food storage areas before and after the supply run

I probably could, but I kind of feel like if I was going to make it less meat I could just buy it, you know! I haven’t, no. I am going to try both beef and pork in the press though, I find the idea odd but who knows! I might really like it! I’ve never had pate, I’ll have to do some googling! Our food is spread out over so many diff spaces atm! It is hard. Once the new kitchen roof is up, the plan is to build in a pantry somewhere which will make things easier. I did get a shot of my fridge though lol, with its lonely choc chips and condiments left in it heh

The garlic bread looks delicious. When I need something like that in a pinch or had bread products that needed to be used, i would butter and season them and pan fry them butter side down sort of like making a grilled cheese sandwich. Also, grilled bread is really good and a good way to reheat leftover garlic bread, but it can burn quickly lol!

In the video I just put up we used a bunch of it for sandwiches and stuff, exactly that, just sliced it in half and buttered side down in the pan to eat hehe, definitely a quick and easy way to get it to that soft state again! :D

@@OurSmallFootprint I figured you had a plan, but just in case. A comment could be good for others, I know I get good ideas from reading them. Mom's quick garlic bread was a slice of white sandwich bread toasted in the toaster, buttered then sprinkled with garlic salt. It works, I had no complaints, still occasionally do it today.

I make my own chicken loaf as well. I use a lot of spice, whole garlic and chillies. Chicken is cheaper my side and homemade tastes so much better than store bought. I stopped buying store bought because it doesn't even taste like chicken and it's expensive.

It definitely doesn’t taste much like chicken to me, but the kids have always liked it! I think I will continue to experiment and find what ‘fancy’ flavours make it worthwhile heh

Yeah, and I think if I regularly bought chicken loaf, it would be a no brainer! But I don't buy it very often, so I'm just not sure if the effort all around is worht it, especially how quickly the kids go through it lol :D

Thank you :). I wear it down a lot more in winter, but its a lot of work to keep the curls looking ok while down, only takes me knotting it up in a bun when I'm hot and theyre kinda ruined lol :D

Nyssa you are so knowledgeable on baking and food prep, I can see is a passion with you. And you are very busy cooking for you family but whose job is it to take care of the garden because its in a terrible state. I just want to get out there is pull up all the dead plants and weed.

It’s my job too ;). It’s on the back burner atm. I’ll get there. These below zero morning will help kill off anything growing and then I can snip and mulch the old plants and pull the weeds easier.

How about potted beef? In the UK ,Marks and Spencer used to sell wee jars of it which uou could use as a spread/sandwich filling. No idea if yhere are recipes on line or not.

Hi, Nyssa! It was very informative and interesting to learn about making pressed chicken loaf and that you could use other meats. I thought I might even try getting the equipment and make some. My husband is a huge lunch meat sandwich eater. So I thought it might save us money if I made our own. I tend to agree with you on whether you could save money, so I probably won't go through the extra time and expense. He is also a picky eater, so he might not like it after I had gone through all that. Thanks for the experiment. I also think your long hair is beautiful. I have always wanted hair like yours, and it will only grow about shoulder length and is kind of thin, so I keep it short or medium length. As always, enjoy your visits and vast knowledge. I haven’t had pate in a very long time but I remember it being spreadable ? This is definitely far firmer than that, very much slicing and bouncy rather than spreadable :)

Maybe an option for making processed meat if you get mince in the food hamper, as you pref your own made mince for dishes...beef might be like the tinned corned beef?

I will share the english muffins shortly, it is in the next couple of videos, I'm getting it typed up to go along with a bulk cook up of them! :D -4 was our lowest low this morning, about -2 when I got up to stock the fire at 6.30 hehe :D

I probably could, but, it would be aluminium, whereas the one I bought is stainless steel, which is a much better metal to be cooking in :)

Cook time will be the main thing I'd imagine, which is why I don't generally give cook times in the recipes I offer, because cook time in a bbq is very different to a standard oven! :D

I wonder if its possible to make the meat loaf then put it in a clean can and then bake it??seems a shame that empty cans get thrown away… the chicken did look nice when it was cooked. So looking forward to the shopping video even though it costs a fortune eh.. 😂❤❤

I'm sure you could, if you wanted that same dense texture you'd have to put weights on it, but the concept is actually pretty simple!

What about buying the cooked rotisserie chicken’s at Costco to use since they are only $5 then you will have the bones to make broth afterward so it’s kind of a 2 for 1.

I don’t imagine I could use cooked chicken to make it! I do love the rotisserie chickens though, but I have to have an esky free just to put them in, so it’s not something I always have room for!

Interesting seeing the chicken loaf process. Not something I think I’d do, nor eat. Have you thought of cutting the bread stick lengthwise, then spreading the garlic butter and slice when reheated?

The chicken loaf really appeals to me! The husband likes turkey (hello slices of gold in your sandwich) so I buy him chicken breast supreme but it's still $22 a kilo and to me is yucky. I love that your chicken tastes like chicken!

I haven’t bought chicken loaf in a long time so I dunno what price is the stuff I used to buy now! Maybe I should check and use that as part of my decision! But this definitely has a mouth feel of chicken, it’s sliceable loaf but doesn’t have that really smooth texture of the bought stuff!

@@OurSmallFootprint $16 a kilo! I can't make myself pay that much for it. I'm not much of a fan of the texture (taste aside) so sliceable chicken sounds awesome! I might have to try with the glad wrap method before I commit to a steamer though. The husband isn't very adaptable 😫

I’ve noticed you mix things on your scales this breaks your configuration slowly over time the weights will be wrong

I try to remove the bowl when mixing and place back on the scales but a lot of the issue is that the stainless steel* bench isn’t flat, there’s forever a foot just not quite in contact with the bench, so then when I put weight in the bowl! A small wooden board that the scales live on would be helpful I reckon :)
