Jamie is SO classy and adorable and he makes baking and cooking look so easy...me I sort of follow Phyllis Diller's Housekeeping Hints! Makes a terrific shower present for a bride to be with a sense of humor. Sadly she never penned an accompanying cookbook! As a cheesecake lover I would love to have the courage to try this! Ever since I saw the film, Love Actually, I've wanted a piece of Banofee Pie, unavailable in the freezer section where I live, maybe just as well...yesterday I watched Jamie make Banofee Baked Alaska! Wow! So gorgeous you don't want to cut into it after you smugly place your masterpiece center stage on the dining table! Viola! Namaste

I would love to make this cheesecake but can not find Merchant Gourmet Dulce de Leche, which appears to be the brand Jamie is using. According to a website I read, this particular brand (from south America) has not been available for three years! Sainsburys does not have Dulce de Leche in stock and Waitrose own version has a poor rating. Is the Nestle Carnation caramel any good I wonder?

You can take a can of sweetened condensed milk, unopened, peel off the label and gently boil the can for three and a half hour in a good sized pot- keeping the can covered by at least two inches of water throughout the process. This will give you the dolce the leche

@@rodneyarnoldi you can also try by transferring condensed milk into a container and cover with silver foil, and keep this in the oven on a tray of water at 180 °c for 2 hr or until become toffee colour.

A faster method to make dulce de leche - if you have a pressure cooker - is to fully submerge the sealed can in water, secure the lid and bring it to a boil. When it starts to whistle, set timer for 30 mins and keep it on full heat. Once timer is up, turn off heat, let it cool down on its own. Open the can and you have caramelised condensed milk.

Hi Jamie! I tried to make the cheesecake, followed the recipe to the point and it tastes good but even when it was out of the fridge, the biscuit base was extremely hard and the banana filling started to melt. So, what can I do to avoid it? The extreme hard base.
