Would this audio extractor, outputs 5.1 over Spdif when the HDMI out is connected to a projector that has speakers??

Yes! It will be able to extract Dolby Digital and DTS audio (5.1) over SPDIF, not Dolby Digital Plus. You would also need to set the source to Dolby Digital or DTS with the Audio Format Selection button, the Blue color indicates 5.1 Channel Audio formats.
