To minimize the process of discoloration due to excessive acidation you can put some salt in the initial water whilst you peel, else the yam may discolor even when it gets to the freezer. You will notice immediately if the yam will discolor when peeling. Not all types of yam exhibit this process. My own observation, anyway. Thx Auntie for the tip on storing them whole.

Stop speaking your language you're on an international platform use it to your advantage you could have had a lot more following but with this your native tounge who wants yo begin to listen.your ghanaians understand what you're doing but the average person does and am sure you're not doing it for them but for john public.no one wants to read either.am so disappointed. I like the fact that your surroundings look clean and you're well presented too so that's what caught my eye to watch the minute you start it became annoying.

Another tip everyone may find useful: I usually allow the yams to partially freeze (approximately 20/30 minutes after initially putting them into the freezer), then separate them while still inside the freezer bag, by simply separating with your fingers, then return the bag to the freezer. This is easy to do if you have the time, your yams will then freeze individually.
