Emmy, idk if you’ll ever see this, but I want you to know that your videos have played a surprisingly large role in helping me keep my sanity through some exceedingly hard times in my life. For a couple years now I’ve made watching one or two of your videos a part of my nightly wind-down routine, and it has helped me calm my stress and anxiety enough to put down my problems for the night and get some rest (instead of ruminating and worrying all night). You have such a positive, light-filled energy in every single video, and your commentary is always enough to catch and hold my interest, which helps me set down my troubles and start to relax, even when my day has been overwhelmingly awful. I just wanted to say thank you, even if you won’t see this. I hope you’re having an excellent evening and that this fall treats you well ❤️

Egg in a hole is the only way I can cook over-easy eggs without breaking the yolks on the flip. Something I've come to realize after making them over the years is to toast one side of the bread first, flip it, then add the egg salt and pepper. Since I'm only cooking the one side briefly, I found the bread was too soft unless I pre toasted it.

I like to make a serving of savory oatmeal (old-fashioned oatmeal with a few pinches of herbs, dash of cayenne, and black pepper). When it close to being done, I start a sunny-side-up egg. I dish the oatmeal, and when the egg is still not quite cooked, flip in onto the oatmeal and let it sit for a few minutes. The yolk will still be quite runny and will mix with the oatmeal.

A thing I like to do with the smaller sized tortillas is that when you have the egg cracked in and the bottom is getting firm but the top is still runny, I lay the small tortilla over top and smush it into the egg a little, and then I flip it, add my cheese and any other fillings or seasonings, fold, and it's done! No need to transfer the egg, it'll just stick itself to the tortilla! Idk how well that'd work for large tortilla though since the placement could be awkward, but this works great for the small ones.

When I was a kid, my mom would make cut up flour tortillas cooked in butter mixed with scrambled eggs and shredded cheese. Very nom. I would always add salsa. Egg in a hole is my all time favorite breakfast, though I call it egg on a horse lol. I actually use the lid of a spice bottle to make the hole, so it’s the size of the yolk. The egg white soaks into the bread deliciously. I also like to toast up the little bread circle next to the egg. Then, to eat it, I break open the top of the yolk and dip the toasty buttery bread circle in the yolk, followed by the corners of the bread. It is the best! Emmy, please try it this way too!

I eat eggs in a way I never see anyone else do. Basically, it's 7 minute boiled eggs, so the yoke is just barely set. Then chop em up in a bowl (hot) with butter, S&P, some hot sauce. Eat hot with toast. It's kind of like hot egg salad (slightly undercooked)

It's my fave way to make an egg sandwich. Peel a hot boiled egg cooked about 6-7 mins so the yolk is still gooey. I then mix with salad cream (British) and fill a buttered roll whilst the egg is still warm and starts to melt the butter. And eat, attempting to avoid yolk drippage.

One of my favorite omelettes is so easy but so full of flavor. As per usual scramble the eggs up & I add a tiny bit of salt & some cracked pepper right to that, pour into hot pan with whatever you use to keep it from sticking I just use canola spray, I add 2 slices of non smoked low fat provolone (it tastes like elevated mozzarella & has a better cheese pull) & smear on some pesto before folding it, turning off the heat, removing from the burner & popping the lid on long enough to finish melting the cheese then enjoy. It tastes like something you'd get at an expensive omelette bar.

When I'm in the mood for corned beef hash after the hash is half way done cooking I'll smooth out the hash evenly, crack a couple eggs on top and cover the pan with a lid to poach the egg. Or when avocados are on sale ill buy one. Cut it in half, remove the pit and if it's one of the large green avocados ill crack an egg in each half and bake it. If it's the smaller ones I'll scramble an egg add granted cheese pour the scrambled cheesy egg into each half and bake it.
