chickpea egg (makes 2):
- 1 cup chickpea flour
- 1/2 cup nutritional yeast
- 1 tsp vegan beef stock powder (can sub. for vegan chicken or veg stock powder)
- 1/2 tsp garlic powder
- 3/4 cup water (add more if desired)
- juice of 1/2 lemon
- 1 tsp white miso paste
nacho bean and rice mix (serves 2):
- 1/2 brown onion
- 1/2 red capsicum
- corn kernels off 1 cob
- 1/2 tsp olive oil
- 1 packet of microwavable brown rice (250g)
- 1/4 cup water
- 1 packet of nacho seasoning (30g)
- 1 can black beans, drained (400g)
tahini dressing:
- 1/2 cup tahini
- juice of 1/2 a lemon
- 1 tbsp maple syrup
- 2 tbsp water
sundried tomato pasta sauce:
- 1/2 brown onion, diced
- 1/2 tbsp olive oil
- 1 can cherry tomatoes in sauce (400g)
- 200g sundried tomatoes
- 1/4 cup vegan thickened cream
- 1 tsp garlic powder
- 2 tbsp nutritional yeast
- salt and pepper to taste
