5 INGREDIENT CHOCOLATE CAKE: 200g plain flour, 70g cacao powder, 180g brown sugar, 1tsp baking powder, 130ml sunflower oil, 500ml boiling water. Whisk together, well, pour into a prepared tin and bake in a pre-heated oven on 180 C / 356 F, for 30 minutes. For the frosting, mix 100g melted chocolate with 100g vegan cream. XOX

This was the first cake I ever made from scratch and failed at the first attempt. Three things I f'ed up at and learnt from....the second try was awesome! - make sure to mix all dry ingredients well. I didn't and the baking powder wasn't well mixed into the rest which resulted in a very pudding-like texture. - don't melt the chocolate over boiling water. Hot water (around 70-80C) is just fine. Otherwise the chocolate gets too hot and it messes up the cream and it gets all runny. - I have added two sachets of cream stiffener, which is almost always vegan (mostly consists of potato starch), to the soy whipping cream I used. It is something that is available at every super market here in Germany and is very cheap - I don't know if that is the case in other countries. It gave the cream topping the right consistency, making it very easy to handle/decorate the cake and to store it in the fridge. Thanks for all your recipies and books, guys. I’ve just made this cake for dessert tonight and now I enjoy a drink (need to reward myself for all the effort 😜). It’s really easy and everything worked splendidly - except for the topping... Could it be that I was too slow with the chocolate cream? It started to get crumbly and doesn’t look as smooth and velvety as yours. Buuuut it still tastes amazing😋😋😋

It enhances the chocolate flavor I normally just add a tablespoon of instant coffee to the hot water and that to enhances the chocolate flavor but doesn’t taste like coffee makes it have a desperado chocolate flavor as well

Coconut with make the cake more fudgy as it settles, rapeseed is fine too if you can give it a smell first just to make sure the sent and flavour isn't too dominant though.

My lemon tree is dropping lemons like crazy and they are huge. One even fell and killed a little bird that was under it. :( So I went out and picked them all and made a lemon cake, and like it so much I will keep making them, though they only use about 3 lemons to make, so I will have to make a lot of them lol.

Yes, you can always substitute oil in baking. I use avocado oil myself.

We only used the sunflower oil because it was cheap and had very little flavour. You can use whatever you have.

Looks like an easier version of Steves Chocolate Mousse Cake. Cake looks good but I'm not a fan of oils. But for people who are not against it this looks like an easy delicious cake, and probably decent in terms of budget as well!

Hi Melissa! You can substitute the sugar. We have a brand in Ireland called Flora that make a carton of vegan cream now. The cream off the top of a tin of coconut milk would work great too.

I already suggest elsewhere, but you can sub about 1/4 of a very ripe avocado for the oil here. You get to keep the healthy fats, in whole form, along with the fruit's other nutrients.

Hi, i have tried to make this cake twice now, the first time the batter seemed really thick but i baked it anyway but it wouldnt bake in the middle, i then made it again and added a little more water to make the batter less thick which seemed to work, and i have checked it after 30 minutes and its STILL not baked in the middle, what am i doing wrong?!?! i am using all the same ingredients as listed

Hi Fionnuala, our shop won't be open unfortunately. We're going to have builders in making it a bit nicer. We have to have 10+ people working if we even open one door so it's a bit difficult to organise distancing etc.
