I tried this recipe. The texture, the sponginess and the look was perfect without any cracks. However after keeping it in sugar syrup as mentioned by you, When i checked the net day, many Rasgullas were not as fluffy and large as they were when I made it. I followed step by step process that you explained in the video. The taste is great but I did not get that fluffiness the next day! You have to put rasgullas in cold chilled water for two minutes, after that squeeze the rasgullas and put all in normal cold sugar syrup, then you will get soft spongy rasgullas.

Too much cornflour or maida / or less quantity of chashni or small utensil can be reason for your problem.. Follow steps for making chena. For 1cuo chena just add 1tsp cornflour, 1/2 tsp maida only. Take a bigger utensil with lid. For 1cup chena, 2 cups sugar and 4-5 cups water, thin chashni which is bubbling hot. Try this, you'll get good round soft rasgullas. Also don't leave rasgullas in hot chashni. They become hard.

I follow all the steps, but I reuse the chashni I preserve in a glass bottle in fridge from prev rasgullas to drench the cooked rasgullas straight from cooking utensil into super chilled chashni. And refrigerate it covered. I then heat the syrup i cooked current batch rasgullas and make it concentrated/little thick, cool it and top it over my rasgullas. Also while cooking rasgullas, it's important to keep adding hot watter every 5 minutes. Its called पानी पिलाना. 😊 I've mastered this in this lockdown. My rasgullas turn better than what we get in market.
