Ingredients for Mango Achaar
कच्चे आम - Raw mango - 1 kg
नमक - Salt - 2 tbsp
हल्दी पाउडर - Turmeric powder - 1 tbsp
मेथी दाना - Fenugreek seeds - 2 tbsp
सौंफ - Fennel seeds - 4 tbsp
पीली सरसों - Yellow mustard - 4 tbsp (40 grams)
जीरा - Cumin seeds - 1 tsp
हल्दी पाउडर - Turmeric powder - 1 tbsp
नमक - Salt - 2 tbsp
कश्मीरी लाल मिर्च - Kashmiri red chilli - 2 tbsp
अजवाइन - Carom seeds - 1 tsp
कलोंजी - Kalonji - 1 tsp
हींग - Asafoetida - ½ tsp
सरसों का तेल - Mustard oil - 1 cup

Nishaji, a few mangoes were slightly yellow in colour, they were probably riping..have we to select such semi riped mangoes to balance the sourness of the pickle?
