As someone from Idaho may I just say, “Idaho Potatoes” are just Russet Potatoes grown in Idaho, and they are no different from regular Russet Potatoes. So, in your local market they will most likely be labeled “Russet Potatoes” and say “Grown in Idaho”. You probably won’t find potatoes labeled “Idaho Potatoes” in the market.

That would work for this recipe (and also works for salad dressing as I DO want to use less BUT I want to get dressing everywhere . . . ya know? and for balsamic vinegar & a lot of other expensive condiments) (like if you like malt vinegar on your fries but don't want to make them soggy) too. ( 👀 heee hee heeeee!) OH! And don't forget that aome folks love mayo, tartar sauce and "special sauce" (mayo and ketchup together).
