Little tip about the butter making: you should kneed it in a cold water bath (wash it) to get rid of the buttermilk, refreshing your water several times. Do this until your water stays clear. This is important if you're not planning on using it all immediately. If you don't remove all the buttermilk it will sour within the week.

best thing about making your own butter is that you're paying twice as much as buying butter from the store. 😂 that $10 quart of heavy cream will yield about a pound of butter, LOLz! 🤣

​@BobRooney290 I am Not denying the validity of your statement. But I have still saved this to my recipes playlist because every now and then indulging yourself ( because the flavor of homemade butter is beyond compare, especially if you pair it with homemade bread or other pastry)... but yeah, realistically as good knowing this is, you won't replace commercial made entirely. If... you are lucky enough to live in an area that has farmers with dairy cows you can often buy fresh unpasteurized milk cheaper than the store... if you are even lucky enough and skilled enough, find something that has real value to them that you can trade! I realize that I am luckier than most, but that doesn't make this invalid.

​@MichaelOKC your statements are so true. Also as I make a lot of ghee, store bought butter has some unappealing things in it. A well known butter had some pink stuff in it that has turned me off of store bought butter.

Just a tip to spray the top of the bread with water before baking. That will help eliminate that dried flour, add to the crust and give a more even color. Once upon a time very long ago, I worked for Au Bon Pain and I had the fortunate experience of learning the baking process as a manager. They had really good baguettes and we would spray them.

Food processor tip when making bread. Turn on the processor before adding the liquids, allows the flower to be moved to the outside of the bowl, then pour the water in. Helps stop the dough from getting under the blade.

After I watched this video for the first time. I spent a few hours searching for a food processor to purchase. Was a little out of my price range but later that day I went to a thrift store and found a 1983 Cusianart. Basically unused. For $12. I use this things every single day sometimes up to six or seven times. bread, butter, peanut butter, nice cream, pie crust .... I can't stop!

They are so great! I found a Cuisinart food processor that my neighbor put out in the alley when they were moving...then I ordered the shredding wheel online, which is not very expensive. I have not tried dough, but after watching this video it will happen soon!

Cultured butter is amazing! I would suggest kneading it in ice water a few times until the water is clear. It’ll get all the buttermilk out of it and make it last longer, and I think it helps it taste better.

@@crystalwonn7480 Yes, he added buttermilk to the heavy cream then let it ferment. You can use yogurt also, as long that it has live cultures in it.

I bought my food processor at a thrift store about 20 years ago. It was old then. Jcpenny and no buttons just twist to work or no twist that's it. I have 3 slicing blades, a dough blade and a cutting blade. I love it. We have used it for so many things. It just keeps going. I may be ready to give it to my DIL as my crew fades out and hers is in full swing.

Whether I am filming or not, I don't even bother with putting it forward or to the side, I can just say, pulse it, or turn it on, and let the processor do its thing by either pulsing or not. All 11-14 cup processors like his have the handle up front, but the chute in the back by the interlock mechanism. the 7 cup has the chute and interlock up front being the exception.

i bought mine to save money, essentially. i pretty much only use it to shred and blend. i buy block cheese, shred it and bag it instead of buying bagged shredded cheese. then i buy whatever bread i'm in the mood for, let it dry out, then blend it with the chopping attachment for bread crumbs. which i then use to make dips and mix in with beef.

If you remove the silicone seal from your clip top jars, you can close them which allows airflow but stops ingress of stuff.

Glad you helped the guy w his food processor during contest. I use to LOVE watching the kids competition on G.Ramsey show. The difference between good sportmanship, compassion, kindness and respect towards their competitors verses the adult version reminds one of the ole "rules for thee not for me" as we teach kids to share, be good sports, not to bully or name call, be good citizens, etc., yet don't see that demonstrated by adults as much as one would expect.

I have that same food processor and I love it for 100 reasons. My top three are 1. any fruit purees that I add to yogurt or cakes. 2. pie crust - they turn out perfect in the food processor and 3. shredding cheese - so much cheaper and quicker to shred your own cheese.

Washing your butter gets it really clean. You can get all the pockets of milk residue out that way. Then once clean I add salt.

Just a reminder to folks: while Mike's organic garden may not use pesticides, if you purchase organic produce from the store, they can still have pesticides. The US requirements for the term are that no artificial pesticides are used. Natural pesticides are still fair game, which means you still need to rinse your store bought fruits and veggies. Also, great vid! Out of curiosity, for the cultured butter is it helpful to boil the cream first? I know with yogurt making you're supposed to boil the milk before adding the culture to give it a more neutral starting environment, but I'm not well versed in cultured butter.

You are supposed to wash the butter and remove the butter milk residue before you refrigerate the final product for use.

Not pretending to be a master chief or anything, just a little French anecdote, my mother always used a razor blade to made the slices on the dough! There always was a little box of razor blades in the kitchen drawer. Anyways I love watching you make everything... But I'm always too lazy to actually do it 😅 Keep up the good work!

I remember making butter in school mini years ago. We were able to enjoy it on crackers and bread. I thought it was the coolest thing and then I shared it with my grandmother who did most things homemade she lived on a farm and she showed me the way she makes it it was all delicious. I will need to make the peanut butter as I can’t seem to find any without sugar lately. When I saw your thumbnail I immediately thought you were going to "mill" wheat flour in your processor to make the bread. Have you tried that?? Just a few days ago I did it in a Vitamix and the bread was delicious! Yes... a little grainy and no... it wasn't perfect. An actual mill would have been better. But I would make it again a million times over. Way better than store-bought!

Very cool content today! Thx! Similar to your meatballs, I just used my food processor to make sausage from boneless country ribs. Have to cut into cubes and freeze awhile before grinding, then add seasoning of your choice and shape. Refrigerate to allow flavor to develop and fry. Delish! 🙂

Country ribs are nothing more than thick-sliced pork butt. I just purchased 11 lb.s for $0.88/lb. So after removing the bone, I'll make over 10 lb.s of ground pork and sausage for less than a dollar per lb.!!

Really enjoy our videos; they move along at a fast pace but not so breakneck that the viewer feels lost. Plus they do not drag on with superfluous cutesy or pointless passages that make you feel like screaming move on already. Always informative and very useful.

I sometime make butter with my Vitamix. I got rid of my mini food processor when I got the Vitamix. But I did not know how to make cultured butter. I definitely try this recipe. Thanks, Homemade butter is so fresh and much better than store bought ones.

I really appreciate the simplicity of it banh mi can seem complicated but you just made it so simple and homemade! I have been trying to figure out what can I do to make cooking for my family easier on me because I have back problems and I can't stand for that long this definitely cuts that time in half as long as I food prep properly and give myself some time. If you wash the butter in several changes of ice cold water (in order to remove all the buttermilk), it will last much longer.

I really want to try to make this. Sorry if this a dumb question but when you say "wash the butter" are you meaning put the whole "glob" of butter in a bowl of ice water and knead it changing the water until it is clear? Finally ringing out all of the water in the butter? Thanks

@@tjsullivan4793 yes correct, and while kneading you sort of pull layer by layer from one side to the other so you really go though it. You can use a spatula or large wooden spoon. Change water and pull layer by layer to the other side. Repeat until clear. Now's the time to get your Dutch hands out, or use two wooden spoons. Lay the butter on a surface and knead until no more water comes out. If you're salting, use butter salt. Or grind salt into fine powder and knead it into the butter. Form into blocks and wrap in parchment paper. Done! Sounds a lot, but once it becomes a routine it goes pretty fast. Good luck!

Pros and Amateurs. Amateur here. As a byproduct of my Keto diet I've noticed that any recipe that calls for citrus juice can just as nicely use zested citrus peel (which has less carbs but does have the flavor) so when in doubt about a lime, zest it first and then get the few drops out of it. @@leemanfatima3615I use 3 1/2 cups or 400 g in an 11-cup Cuisinart Classic. Use cold water and process 60-90 seconds. Only add enough water to bring the dough together, otherwise you'll have a sticky mess.

I learned the bread dough in the food processor trick for bread to make weeknight pizza dough. A game changer. Food processor is not only faster, it makes for so much less mess and cleanup. You missed a great surprise food processor recipe, Nigella Lawson’s Fairy Cakes. Almost instantaneous cupcakes with zero mess. A parent’s lifesaver for kids parties or last minute makes for school next day. Like the food processor butter. Flashbacks to making butter at Girl Scout camp, shaking a mason jar full of cream, passing it on to the next girl when your arms were exhausted. Tiny bit of butter, but best ever.

I love my mid sized processor from the 90's. Finding replacement locking lid and correct blade was the Bain of my 2020 experience. I now have parts for 4 different processors but no complete one. Folks really need to correctly identify their listing. I know what I have, why don't they know what they have?!?

Great video! Love the marinated veggies! I was told to never keep raw meet, after cutting it, in the fridge because of bacteria, especially chicken, so I am not convinced with keeping the mixture overnight.

my Vietnamese mom taught me to salt the shredded daikon and carrot and let it sit for like half an hour ish, then rinse off and basically proceed like you did but without adding salt again in the second step :)

Great video! I’m going to dust off my food processor! I recently purchased a couple of sliding mats for my heavy small kitchen appliances like FP and stand mixer. I love the idea of making rolls in the FP. I’m really sick of the breads found in stores, especially with all the bromide warnings, so must try your recipe. Thank you! 😅

Long ago I was convinced I couldn't make bread by kneading on my own. Voila--food processor I used with a recipe for bread that came with the machine. (I wanted it for making chile.) Went to some pastry classes and can now hand-knead anything, but often go processor depending on the day.

I bought a food processor to make salads but one day wanted to make cookie dough. I was crying trying to mix it by hand (I broke some tools trying to mash it), and I wished I had a machine to mix it... then I realized the food processor had a dough attachment I always ignored, and I was thrilled I already had all I needed in one evening. It really is a marvellous and powerful machine.

This was an awesome video! I replaced my 15 yr old food processor with a Ninja- I am hoping I can use it for most of these- I do have a 1970's All Steel Vitamix that has a dough making instructions- I haven't tried it yet though. Thanks for all these ideas!

I had a 70's steel Vitamix and it would grind the wheat berries into flour and process the dough. I left it at my brother's house and he gave it away or threw it out 😫, I have never forgiven him for that.

I got a Ninja this year. It’s ok, but after more review I wish I would have got one with larger shoot. I think the one in video has the multi size opening. Oh well, it’s better than the mini I’ve had for years.

Thx for a great video:) I love all ur videos and they inspire me so much in my day to day cooking. One thing tho , could u pls pls tell in ur vid how long the food can keep in the fridge? Like the chicken meatballs prep is ground meat (so maybe two days max) but then the soy sauce and sugar gives a marinate soooo my brain says four days but it’s a pretty vague estimate:/ Anyway thx a lot for all ur videos they amazing 🤩

I notice your food processor had moisture inside when you took it out of the cupboard. This often used to happen to me because the plastic parts are really difficult to dry properly. It can leave you with a mouldy smelling appliance. The easiest solution is to store the parts loose in the cupboard. Only reassemble them when you actually want to use it again

I never fully close up mine, I put the lid on, but do not put the chute in place so air can get inside the bowl and it just sits on my counter in between uses as this will make it easier for me to utilize and I do, several times a week often, but certainly at minimum of once a week.
