For those who like to add fruits to their frosting, I recommend getting/making the fruit freeze-dried and then use a food processor to make a powder. By doing that, you get all the flavor/color of the fruit without the extra moisture from water!

I have 2: 1: if you store apple slices and cookies in the same container, it will keep the cookies moist. 2: you can use jello as a substitute for food coloring when coloring frosting I am a bit suspicious about these hacks so I hope you test them. Thanks!

A million years ago, I worked in a place where I did a lot of piping and we used the frosting bullet technique here. It wasn't to save money on bags, because we used heavy-duty reusable cloth piping bags, not disposables. The reason we did it was mostly to keep everything neat and clean and orderly (particularly since we were minimum wage workers, not pastry chefs). We made all our bullets in the morning and only had to clean the piping bags at the end of the day and switching colors was no big deal. Any bullets we didn't use were fine to use the next day since the frosting didn't dry out. It was such a handy trick, I still do it now if I need to pipe a lot of frosting.

If your Merengue buttercream splits, take some of it out and in a bowl heat it in the microwave till it melts and then add it back into the rest and rewhip it, it'll come back together!

@@fightingfaerie There are other ways to store extra icing (like in a jar or any other container). It's quite a bit of plastic waste you're producing, especially when you bake often. Plastic wrap may be convenient, but it's really not necessary, especially when you throw away the piping bag, too.

I'm a pastry chef and I try and only lightly mix cake batter too and was taught this in college. I do know the science behind this, kinda complicated to explain tho, I'll try and simplify. Okay. When making bread you knead it, usually at least 7 mins or so. This is because flour contains a protein called gluten. Kneading dough stretches strands of gluten making them more elastic. More elasticity makes the dough able to stretch to contain small bubbles of CO2 which is produced by the yeast. These bubbles of gas are what causes bread to rise. Without kneading and elasticity, the bubbles will pop and the dough will be dense. If you overmix cake batter once flour is in, you are beginning to develop the gluten resulting in a chewy cake. You want a cake not a bread.

The plastic method for icing (my work called them 'bullets') works better with plastic bags, for cloth icing bags, when speed/efficiency is a factor. The point was never to keep the bag clean(it did help) but to allow fast refills

Phoenix._. love I’m not a professional or whatsoever, but reusing a piping bag would be really unhygienic, especially if you use buttercream. After washing the plastic bag, the frosting will definitely leave an oily residue, the smell of dishwashing liquid will definitely be in that grease. So it’s a no no.

Great video, please more of these hack-testing ones! :) Hi Ann, I have a question. My 9-year-old nephew loves to bake (he only started recently, but at this rate he'll be replicating your complicated recipes in a couple of years!) and the whole family is supportive and encouraging, but the kids in school tease him because they say baking is "girly". We tried explaining that there's nothing wrong with a boy/man cooking or baking and that he should do it if he enjoys it, but do you have any other advice or ideas? We just don't want him to be ashamed or get discouraged :(

I used to decorate birthday cakes for 5 years and we used the plastic wrap hack at our bakery for a quick refill on the common colors and keep the bright colors from staining the reusable bags. We called them “bullets” because you loaded them into your piping bag. BUT BE CAREFUL you will get pieces of plastic wrap in your frosting near the end of the bag and no one wants to eat that/give it to a customer. One thing we found that helped this was not to cut at the twist but at a cleanly shaped corner of the bullet.

About the last one, you can just was and reuse the piping bags, it's less waste than either throwing them out or using plastic wrap. If you're worried about the chemicals in the cheap plastic you can also get nice reusable pipping bags in a thicker plastic or silicone.

I use the clingfilm piping bag method not for saving money , but to save on mess. The cling film stops the icing coming out the top of bag, especially when teaching childrennor someone new to piping how to pipe. It also makes refilling bag faster and less messy as the bag is clean and you can get all your clingfilm sausages done before you start piping. Also it stops the buttercream crusting over whilst waiting to be used as no air gets to it once wrapped in the clingfilm

My teacher taught me the saran wrap trick when I first tried frosting, since I made a mess all the time, wasted a lot of frosting and found it hard to control the piping bag. Helped a lot

I've heard that using a diffuser on the hair dryer helps prevent splitting and melting. Also, you can get a smooth shine using a warmed spreader. The trick being getting the magic level of warmth. The tiniest bit off, and it doesn't work at all. I've accidentally accomplished this, with no success at repeating the results.

The saran wrap piping bag is what we used at Coldstone decorating caked. We used a whipped cream type of icing that was mixed in batches of plain white. We used this tip so we could mix up special colours then tuck any unused wrapped up neatly in the freezer until the next cake

The hair dryer has actually worked for me in the past to smooth out ganache. Set it on warm and blow onto a chilled cake till the ganache just starts to melt and then use a cake smoother/spatula to smooth out all the bumps. Helps you get a smooth finish.

hacks from a bakery - to smooth buttercream, just keep moistening your spreader for the final smoothing. To save money on piping bags, just use baking paper cut diagonally to make a triangle and roll it into a cone. For most of the basic shapes you don't even need a tip, you can just snip the end, but you can also snip then drop a tip in there before your icing.

the last hack also makes it easier to use more of the icing - as the plastic wrap keeps the icing in a nice, neat ball, it's easy to squeeze it out. If you just spoon it into the icing bag, a lot can get stuck to the sides and is more difficult to use. you can also stop halfway and refrigerate the icing without too much hassle or mess.

For the butter cream hack, use a steam gun. It's not as strong as a hairdryer and it will slightly melt the butter cream without separating the mixture.

For the lemon one, I use a metal chopstick and sort of swirl it around once I’ve poked a hole in the lemon. I can get so much juice, and once I cut the lemon open, there are barely any juice left to squeeze

I actually heat my cakes for the shiny icing all the time. Using a blower seems bad in general, all I do is place it in a mild temp heated oven for like 15-20 seconds. The oven is pre-heated to the point that it feels nice and warm in your skin, but not burning or the 'wave' sensation of heat and switched off. The reason the icing peeled is because of the air pressure pushing it away from the impact point. The oven makes it shine evenly throughout.

For the hair dryer on buttercream hack you used, I'm presuming, a swiss or Italian meringue. You can use a hair dryer on the lowest setting about 6-8 inches from the surface on American buttercream and it will work.

Iris Waldenburger plastic bags include some toxic things, so the ocean is getting toxic and polluted. not only the sea animals are eating it, but it also kills them quick with the toxins and the bag itself.

Food safe is just that the amounts that leech out of the plastic into your food are within a government decided safety limit. The trouble is that these chemicals are most likely accumulatiing inside your body over your life and the effects, long-term or otherwise of this are barely researched. Although BPA acts as a female sex hormone. So reducing contact with plastics is generally a good idea.

The plastic wrap one works when you have too much icing/batter to fit in one piping bag. It works very well for me when I bake a big batch of macarons and do not want my batter to dry out while I pipe and bake a tray at a time.

For the frosting bags you can use it in a reusable piping bag just to make it easier to clean and it means you can use the same bag for more colors.

I always make "sausages" of icing with Saran Wrap, even when only using one colour. Then when you need to re-fill the piping bag you just take the empty Saran Wrap out and drop the next sausage in. It makes mixing colours in a piping bag super easy too

That last hack, about putting the frosting in plastic then into the piping bag, may also be a good idea if you're using multiple colors of frosting-- it saves having to clean out the piping bag between each color and/or using a bunch of piping bags. Like, for a rainbow effect. Also, if you want to keep using the same tip on a couple of colors.

The last hack using the saran wrap was my favorite because I always make a huge mess when I put frosting in the piping bag! I would just love to have my frosting go in less messy. Am going to try. Also thank you for the great video.

Instead of going through all the work of wrapping the frosting in plastic, just get a set of washable silicone piping bags! It works like a charm, you'll never have to buy piping bags again.

I got treated similar to this when I fell down the stairs while sleepwalking (sometimes I sleepwalk, no clue why) and the heifer didn’t even order an X-ray if the part of my arm that was hurting. She literally said I had been “partying and drinking” (I hadn’t been) and that if it was actually broken “you’d have been in here 7 hours earlier”. Then gave me a speech about not prescribing narcotics, which I rarely take and only for a tooth abscess or something like a broken bone or something similar, THEN proceeded to give me a script for narcotic pain meds. A week and four days later, when the pain was unbearable, I had my oldest take me to a different doctor and my arm was indeed broken. Makes me sick the way some act.

Regarding the piping bag hack, I think it could be useful for stopping the icing from overflowing from the top instead of saving a piping bag. My main problem is overflowing piping bags. I don’t fill them to the brim but despite the fact that I leave a couple of inches empty I can’t seem to be able to twist the top enough to try to stop it from escaping from the top. I have to use bags clips to stop the spillage but sometimes the icing or batter is too liquid so it still manages to escape and I end up with sticky hands. Using plastic wraps and tying the top might be more useful than clips…

i know this is a late comment, but the tip for the reusable piping bag is also a good way to pipe multicoloured icing if you don't want the colours to mix too much. Colour your icing and make two or three small plastic wrap 'sausages' in the one bag.
