Onions have layers, please stop doing horizontal cuts. It makes it unstable, less save (as clearly seen in your presentation, as I feared for your fingers), takes more time and even gives you more uneven dices in the end. So there is absolutely no benefit from doing so :) and lastly, to cry less, make sure you take a super sharp knife as it will avoid destroying more from the little cells in the onion, that contains the liquid, which makes you cry ;) if your cutting board stays dry after handling the onion, you most likely have a perfectly sharpened knife.

This is hotly debated in the culinary community. Some greats like Chef Julia Child would do horizontal cuts, others like Chef Jean-Pierre say it’s unnecessary and potentially dangerous.

@@katvtay true, although they keep doing it usually out of tradition and things evolve, same as the simple technique on how to cut an onion 😊🍻

@@catam696 Don’t you dare imply Julia Child was dated! Haha, JK. I do love her, but some things… erm… for example, she was a fan of beurre manié which is old and kind of yuck. I personally don’t do horizontal cuts (as a non-chef) because I’m no pro and don’t want to ever cut where I could slip with a sharp object. But (as a non-chef) I won’t impugn someone using it. Chef Kelly does appear to stabilize it so it’s safe for her. The natural fabrication of an onion does result in some uneven slices without the horizontal cuts. Chef Kenji has a good technique *which avoids horizontal cuts completely* and going in at an angle for the vertical cuts, based on the geometry of an onion. I feel like it is easy enough for even home cooks to get the general execution of it, and it omits horizontal cuts.

@@katvtay cutting in angles while doing vertical cuts closer to the shape of the onion is beneficial to get best results. Although I disagree with getting better squares by using horizontal cuts. Due to the shape and layers this cut causes even more uneven and sizes of dices 😊 Overall everyone is free to use his/her preferred technique and how they prefer to cut 😎 Simple as a suggestion for home and non-professionals it's best to skip the horizontal cuts 🍻 Aaaand in the end I have never ever met someone, that was able to tell me, if the onions, included in a cooked dish, were cutted in the one or other way 😂 If you want perfect dices, then we would need layer by layer and cut them, although that's done generally in high class restaurants only 😉

@@catam696 I forgot to specify Chef Kenji’s technique is NO horizontal cuts. That’s why I like it, because the slight angles he uses for the vertical cuts allows to cut it safely while allowing for even pieces.
