I do a similar mescal margarita but I use Ancho Reyes rather than some slices of hot peppers. It's slightly sweet so I do 3/4 curacao, and 3/4 ancho reyes, and no simple (although I like my drinks less sweet so the agave syrup would still be nice).

Fantastic timing with this video! I just finished my first version of making a chamoy margarita. a friend of mine from mexico is always saying my cocktails are sweet. So I set out to make one with a flavory profile she would like. She said she loves the taste of Chamoy. I broke down the ingredients and set out to make a cocktail have the same profile, but not feel like I just used Chamoy in a normal marg. Chamoy is made from ingredients that represent all the flavors on the palate: Sweet dried apricots, spicy chile de árbol, salty Tajín seasoning, and sour hibiscus flowers. I already was using hibiscus simple in a whiskey sour variation at the bar. But it really wasn't providing a sour taste to it. I also wanted to keep things as simple as possible so I tried to make sure I only needed one syrup for the cocktail. I decided that the heat from the chillies, the flavor from the hibiscus, and the sugar in the syrup would all work well together. But in order to really get that pop of sour I was looking for I added some citric acid to the mix. Basically, I steeped the chillies in hot water, added the dried hibiscus flowers, added citric acid to the sugar and then slowing poured in the sugar to the chillie hibiscus water, stirring the whole time. Once I had the simple syrup it was a pretty easy build of: 2 oz blanco tequila, 1 oz apricot juice, 3/4 oz simple. Served with a Tajin rim. Worked really well.
@randalrichmond43582 жыл бұрын
Love the Hibiscus variant. I worked in a Mexican Restaurant that had Aguas Frescas like Horchata and Jamaica. Jamaica was made in the traditional way the Mexican owners remembered from their home state of Jalisco with dried hibiscus flowers, ginger, and sugar. I simply added half ounce of fresh lemon and lime with reposado tequila and orange curacao. I called it the Quibiscus. Summertime favorite in the restaurant!

Here's another vote for omitting orange liqueurs from margaritas. I just never enjoyed the flavors they bring to the table. Instead, I want a lime-forward (1 oz fresh squeezed) marg with agave nectar (1/4 to 1/2 oz) to balance it. I tend to introduce a dash or two of orange bitters + whatever other bitters I feel like (habanero, smoke chili, etc.). I often will do a half ounce of mescal with 1.5 ounces of tequila, typical silver but reposado or anejo would add some nice flavors. Depending on my mood, I vary between garnishes. Typically I do a chili powder and salt mixture for the rim and drop half of a spent lime right in the drink. Is it 5:00 yet?!
@wafelsen2 жыл бұрын
My understanding is that Daisy is one family of cocktails and includes orange liqueur. Spanish for daisy is margarita. There exist other daisies with other base spirits. There also exist the family of sour cocktails, which your spec looks more like.

@@wafelsen This is interesting, thanks for that history! I'll just say that I think most who try what I make would be more likely to say "that's a margarita" than "that's a sour." Which is to say I guess perception might be more important than taxonomy?

The one that I see often brought up among tequila aficionados is the Tommy's Margarita: 2 oz Blanco or Reposado, 1/8-1/4 oz Agave Nectar (to taste) and 1 oz lime juice, shaken, poured on rocks, and rimmed with some salt using the agave nectar if desired. It's simple and exemplifies and elevates the taste of the tequila, the same way a good Old Fashioned does for whiskey. This also works with Mezcal.

Tommy's is my preferred build for a margarita but standard recipe calls for 1oz of agave syrup (1 part agave nectar, 1 part water). I have on occasion just gone with 1/2oz straight nectar out of laziness and I'm sure you could get away with a little less but I think 1/8oz would be way too little sweetness.
