I've experimented with beef before but not as much and not with Wagyu (not even Prime). 1. I've had issues making shio more complex with fish notes. It's too easy for katsuobushi and/or niboshi to overwhelm the beef if using regular aroma oil. Rendered beef fat from striploin steaks needs to be used for the aroma oil (with some garlic and katsuobushi, because beef fat has too distinct flavor). "Chashu" here was just raw brisket strips (same stuff used for Korean BBQ or pho). 2. For shoyu, I braised short rib in koikuchi shoyu + Chinese dark soy sauce infused with mushrooms with some aromatics and a bit of rock sugar, and then used that as tare. Trimmed fat was also infused with a little garlic. The result: if this one is like sukiyaki, the one I made ended up like if you put galbijjim and galbitang (bulalo if with shank and Japanese corn in the Philippines) together. 3. My experiment with dandanmian/tantanmazesoba and beef was born out of laziness. You know how dandanmian uses peanuts in other countries? I once had leftover sauce from a beef stomach+ox tail that was stewed in a peanut puree made by my mom. I had noodles, I had chili oil, and I had pork sausage. So like a drunk college student I put them all together, and despite peanuts and beef it was good. I have since made sure to use leftover beef+peanut sauce this way, although internet shopping has made it easier to have sesame paste handy.

You are a ramen superstar (trying all those things to begin with)! Right - in the shio bowl at MENSHO they don't use any beef in the soup or even as toppings. I think you as you highlighted, it really hard to find a balance with those fish elements alongside beef (vs say, chicken). That shoyu bowl sounds fantastic - was much easier for me to visualise when you mentioned it was like galbitang / bulalo...fatty and exploding with flavor. Trimmed fat you said? Was it Taiwan where they use peanuts a lot in dandanmian? I'm sure it's not just them but I know their version is quite creamy like Tokyo's vs the original style in Sichuan. Leftover or not, it sounds like you still were able to whip up a magical dish with this one too.

So fun to see all the different ramen!the A5 one with sukiyaki flavour sounds amazing, I would try that. I agree that the plastic straw kind of ruins the beautiful cup. I know with the pandemic now and cleaning it is probably not possibe but a metal straw in the same colour would be more fitting. If you love apple pie you shoould try the Dutch one once when you got the chance :) Homemade is the best of course hahaha

Sooo good, that A5 bowl stands out! I think so re: a metal straw. Have one at home - will try and bring next time 😃. Is Dutch style with a crumbles on top of the apple pie? If so, I have tried it and loved it. It wasn't homemade tho - will need to take care of that in the future.

@@5AMRamen no Dutch apple pie is with a lattice crust on top an stuffed with rather large apple chunks seasoned with sugar and (lots of) cinnamon and sometimes raisins added. The crust is a bit chewy and crumby at the same time. The taste really varies, it's a real taste of home treat.

cool! I thought those two faces looked familiar! I was not prepared for how rare the a5 wagyu ramen was, wow but I guess it gets cooked. Dried tomato is an interesting addition! I haven't been to LA in ages! But both Hakata Ikkousha and Rakkan are directly from Japan and I also hear good things about Takumiya 👍. Need to visit LA again once all of this is behind us.

Another tempting n tasty review including tabi eats!! So interesting how size, thickbess, other additives are considered caredully when constycting each bowl. Bonus with a dessert addition thrown in! 😀 dies menma compliment wagtuu beef more than an egg or green onions ir sprouts? Just curious bc it contributes it’s own dimension too. 👍🏿😀💕

Absolutely - each ramen shops had to consider all those things you mentioned, and how everything fits together in the end. Mensho is a perfect example of that! Always room for dessert 😅. There were green onions there as well but I do think the crunchy menma are a nice contrast to the softer wagyu (moreso than bean sprouts). Perhaps that was they were aiming for!

Tabieats is awesome! That last tantanmen is indeed incredible. The wagyu are slow-cooked (like sous vide) so perfectly fine to eat 👍

That looks incredible. The cut looks similar to roast beef and from what I can see it's also dry aged? The fat cap is yellow so it looks aged. Is this the same place on your website in Bunkyo City? I want to save the address for next time I go. I can't wait to go back to Japan.

Wait- so both the Lamb and the Wagyu are from Mensho? Available at both locations or only one?

Yes, both from the Mensho group! But only "Mensho Tokyo" (Suidobashi, Tokyo) in the TabiEats video serves the lamb ramen. "MENSHO" (Gokokuji, Tokyo) in this video serves the wagyu ramen. However, the wagyu ramen is also served at "Mensho San Francisco" (Shinjuku, Tokyo). Thanks for watching!

The best ramen I had in Tokyo was a Spicy Tokumaru in shibuya.. Most if the Ramen I had were very fishy for me so I did enjoy the spicy ones.

Also Mensho? I checked the menu of Mensho in Bunkyo but it was mostly lamb stuff. Are these wagyu ones only available at Jikasei Mensho? Gosh, if I had all that ramen, I think I'd just be able to handle some fruit for dessert. Or ice cream from 7/11 :D
